Sam's Famous Carrot Cake

What a great carrot cake! So good and not greasy at all like some of them. I made this with cream cheese frosting which I coloured green as a "soccer cake" had been requested and it made a wonderful birthday cake for our large extended family. Between the cake and the icing it packed enough punch that more than the single layer was not necessary. This cake would work equally well without icing, as a take-along cake for school lunches, snacks, etc.

Lemon Yogurt Muffins

I found this recipe while searching for something that would use up some yogurt I had and what a pleasant surprise! Since I have a child who has to be on a low-cal diet I reduced the sugar to 1/2 cup, omitted the glaze (sadly, I'm sure it would have been yummy) and added some sliced almonds for a hint of protein. I used plain yogurt too. Reducing the sugar worked fine for me as I don't like overly sweet stuff and my son isn't supposed to eat it, but might not work for most people's tastes. The recipe is a wonderful key recipe that, besides lemon, could lend itself to all kinds of variations. I plan to try it with lavender this summer!

Easy Slow Cooker Carne Guisada

Cuban Ropa Vieja

This was great! Everyone loved it, even the baby--he couldn't get enough of it! I used a pot roast cut (blade, I think) and it was great. I made pickled onions to go with it and served it on tortillas and took the leftovers for lunch for the next few days. Heated them up and slapped them in a sandwich and had my co-workers all drooling.

Chocolate Pudding Cake III

What an awesome recipe! I made it using mint chocolate chips and peppermint extract, and served it with candy cane ice cream (since it's Christmas). Can't wait to try it with raspberry chocolate chips and fresh raspberries with whipped cream in the summer.

Rum Sugar Cookies

These are fantastic! I have been making them for five or six years straight and they are always a favourite. Different from your standard sugar cookie cut out. They really, really taste like eggnog. I usually use rum extract for the cookies and real rum (piced or dark) for the icing (thinning it with rum as required). The only thing I have found is that if you want enough of these cookies to feed your family and give away, a double recipe is ESSENTIAL!!!!

Spaghetti Carbonara II

THIS is exactly the recipe I've been looking for! I kept trying to get carbonara right, and it never quite made it. This recipe was perfect. I took the other reviewers' suggestions about the cream, but didn't want to leave out the wine, so I put 2 tbsp of white wine and 2 tbsp of cream. It was exquisite!

Roast Hens with Golden Vegetable Hash

This was a pretty good recipe. The only thing I found was that I didn't check the vegetables as often as I should have, because at 425, they cook pretty fast. Don't assume the veggies will take as long as the hens!

Jalapeno Jelly

Although this recipe burned my eyes and under my fingernails were on fire for a week, the end result was fantastic! I too ended up with more liquid, sort of on purpose and it turned out fine. Although my husband wanted it even hotter. Great recipe!
