Sweet Potato Biscuits

MMMM! These were delicious home-style biscuits! I used leftover mashed sweet potatoes and carrots from Christmas dinner and they turned out beautifully! They had such a pretty golden orange color!

Spiced Banana Cake

This was a really great cake. I made it at Thanksgiving alongside the pumpkin pie and everyone had some of each! I used the allspice cream cheese frosting, and it was good too. The only thing I would change is to use only about 3 cups of icing sugar in the icing, I found it a bit too sweet and I would have prefered a creamier frosting. Will make again!

To Die For Blueberry Muffins

These muffins really were to die for! I didn't have the large muffin cups, so I used a standard sized 12 cup one, but still filled the cups right to the top. I had to add a bit more milk to the batter, because it was about as thick as cookie dough, but other than that I did not change a thing. We ate these for snacks, but also , since they are so rich and cake-like, for desert, warm from the oven with a scoop of vanilla ice cream!

Mexican Whole Wheat Flour Tortillas

These were so easy and delicous too! Iloved how they had less fat and used whole wheat flour. I used my electric mixer to do the kneading for me and they worked out fine. I added some ground cumin, just for some more excitment, and make them a bit larger than in the directions. I will never buy tortillas from a store again! Thanks Claudia!

Awesome Sausage, Apple and Cranberry Stuffing

Really good, and pretty simple. We browned the sausage mixture the day before, and that worked well. Was a nice change of pace from ordinary stuffing.

Microwave Lemon Curd

This was really good and simple to make aswell! I spooned it over vanilla ice cream for a quick but delicous sunday night dessert for the family. I also used it spooned over To Die For Blueberry Muffins(also on this sight) for dessert in a hurry. Don't be fooled by how runny it looks in the microwave, because it thickens as soon as it cools!

Best Chocolate Chip Cookies

Yummy! By far the best chocolate chip cookies ever! I baked them for a sick friend who absolutley devoured them! Soft and chewy, but not doughy. I used regular chips but also butterscotch chips because that is what I had on hand. Thanks!

Rice Cereal Energy Bars

These are delicious, and although they aren't low in fat or calories, they are a healthy boost of energy. I used half honey and half cornsyrup, , dried cranberries instead of cherries, and did not add the sugar in order to cut back on calories. I am glad I didn't, as they would have been way too sweet. Perfect snack for hiking, day trips, or busy events. I will definitley make these again.

Lima and Navy Bean and Ham Soup

A good, hearty soup. The flavour was fantastic, even though i didn't have the sausage to put in. I used cooked ham left over from Christmas dinner instead of the ham bone, and that worked fine. Next time, for convience's sake, I may use canned beans, but the dried ones worked well too. I gave this to my brother ( a college student) to fatten him up, and he loved it.

Cinnamon Streusel Orange Muffins

Yummy! These were just like little mini coffee cakes! Be careful you don't put too much batter in the pans the first time, I was two muffins short on the second layer, but no biggie. The orange was nice, not too overpowering.

Blueberry Lemon Bread

I really enjoyed this bread. It was really moist, but it may have been a little bit too dense. The lemon flavour was just right, not too sour. It was good with the glaze, but is sweet enough to be served without it also.

No Bake Camping Cookies

These were good, and easy too. They were a bit boring, so next time I might add some extra goodies like nuts, or chocolate pieces to the mix. I wasn't going to roll them in sugar, but I had to or else they would have melted in your hands!

Molasses Sugar Cookies

These cookies were delicious! I made them at Christmas and they were moist, but not too soft. My whole family loved them, and they made the house smell even more like Christmas.These spicy cookies will become a holiday tradition in my home!

Cranberry Almond Biscotti

When I first made these, I had never done biscotti before, and I was afraid they would be a flop, but they were GREAT! I used the almond extract, and the only thing you need to do to these that is not in the recipie is to knead them for a few minutes when they are in the two seperate logs, or else the dough is a bit crumbly and unmanagable. I have made these twice now, and the second time, I dipped oneend in chocolate and gave them away to friends around the holidays, so pretty!

Healthy Coconut Oatmeal

This was so good! It was the perfect sweetness and consistency. I didn't have enough milk, so I used some water aswell, and it turned out fine, still really creamy. I did not have the cranberries so i used golden raisins and dried currants, and it was really delicous anyways, but I would like to try the cranberries. This will definitley become a Saturday morning staple!

Pan-Fried Steak with Marsala Sauce

These were great! Next time I will reduce the sauce a bit longer, as it thins out again when you add the butter. A perfect recipe for when the weather won't allow for outdoor grilling.
