Cranberry Almond Biscotti

When I first made these, I had never done biscotti before, and I was afraid they would be a flop, but they were GREAT! I used the almond extract, and the only thing you need to do to these that is not in the recipie is to knead them for a few minutes when they are in the two seperate logs, or else the dough is a bit crumbly and unmanagable. I have made these twice now, and the second time, I dipped oneend in chocolate and gave them away to friends around the holidays, so pretty!

Peppermint Chocolate Fudge

This was by far the most delicious, creamy, and easiest fudge I have ever made! I added a little more peppermint extract when I made my second batch, to give it a bit more puch. Thanks so much, this will become a new festive holiday tradition!

Microwave Lemon Curd

This was really good and simple to make aswell! I spooned it over vanilla ice cream for a quick but delicous sunday night dessert for the family. I also used it spooned over To Die For Blueberry Muffins(also on this sight) for dessert in a hurry. Don't be fooled by how runny it looks in the microwave, because it thickens as soon as it cools!

Rice Cereal Energy Bars

These are delicious, and although they aren't low in fat or calories, they are a healthy boost of energy. I used half honey and half cornsyrup, , dried cranberries instead of cherries, and did not add the sugar in order to cut back on calories. I am glad I didn't, as they would have been way too sweet. Perfect snack for hiking, day trips, or busy events. I will definitley make these again.

Emily's Famous Roasted Vegetable Salad

This was pretty good. Next time, I will adjust the dressing to better suit my tastes. Also, I used zuchini because there was no yellow squash at the store, and that worked great. I will roast the eggplant and zuchini a little less next time before adding the rest of the vegetables, as i found they were a bit over done, and the rest were a bit under cooked. Overall, this is a good basic recipie that I will make again, just with a few tweaks.

Pork and Sea Shells with Summer Vegetables

This was really good! A nice fresh summer pasta recipie. I used broccoli instead of squash, whole wheat penne to make it a bit healthier, and two pork tenderloins instead of chops. It is a really low fat, but delicious recipie. I had to add a 28 oz. can of tomatoes though. This is definitley a keeper!

Cozy Cottage Beef Stew Soup

The flavour of this stew was amazing, and it was so nice to come home to the smell of delicious(but healthy) stew! The only thing I would change, is to reduce the amount of liquids, it was thicker than soup, but had just a touch too much liquid for the amount of veggies and beef.

Flax Seed Carrot Cake

This was really tasty, but i wouldn't call it carrot cake as it was not suitable as a dessert. It was more of a dense,fruity quick bread to have with coffee. I'll probably make this again, it is a very healthy and diet friendly recipe for a quick bread.

No Bake Camping Cookies

These were good, and easy too. They were a bit boring, so next time I might add some extra goodies like nuts, or chocolate pieces to the mix. I wasn't going to roll them in sugar, but I had to or else they would have melted in your hands!

Shortbread

This shortbread was really nice! It was a beautiful golden color,and not too sweet-real shortbread. I wrapped the circle in red cellophane paper and gave it away as a Christmas gift. Four stars only because the dough was slightly dry, nothing that I couldn't fix by adding some more butter.

Banana Snack Cake

This was really yummy! I used half the butter, and replaced the other half with fat free vanilla yogurt to lower the fat a bit. I only had a cup of chocolate chips so I used the in the cake part and sprinkled brown sugar on the top instead. It was really good and gave it a crunchy-sticky topping. Next time I will sprinkle the chocolate chips and the brown sugar on it. Will definitley make again!

Awesome Sausage, Apple and Cranberry Stuffing

Really good, and pretty simple. We browned the sausage mixture the day before, and that worked well. Was a nice change of pace from ordinary stuffing.

Home-Style Brown Rice Pilaf

Really good! I used left over(cooked) rice because I had it on hand. I made the veggie mixture my own using zuchini and peas instead of chick peas and mushrooms. Had no parsley, so I just fooled around a bit with the spices. My dad said at least 5 times that "It was really good", which is a big compliment since he usually turns up his nose at anything he hasn't had before! I served it with a greek salad and chicken souvlaki. Thanks a lot!

Mexican Whole Wheat Flour Tortillas

These were so easy and delicous too! Iloved how they had less fat and used whole wheat flour. I used my electric mixer to do the kneading for me and they worked out fine. I added some ground cumin, just for some more excitment, and make them a bit larger than in the directions. I will never buy tortillas from a store again! Thanks Claudia!

Healthy Coconut Oatmeal

This was so good! It was the perfect sweetness and consistency. I didn't have enough milk, so I used some water aswell, and it turned out fine, still really creamy. I did not have the cranberries so i used golden raisins and dried currants, and it was really delicous anyways, but I would like to try the cranberries. This will definitley become a Saturday morning staple!
