Butterscotch Pie I

The flavour of this pie was really authentic, and the meringue turned out well. My only complaint is that after the finished pie came out of the oven, the filling began to seperate. Next time, I will not add the 2 tablespoons of butter, and that should fix the problem. The filling thickened up really well, and had it not seperated, it would have cut really well too.

Cranberry-Hazelnut Coffee Cake

I made this cake to bring to work, and everyone loved it! I had no hazlenuts, so I used pecans, and I added more cranberries, but other than that , I wouldn't change a thing! I usually make a "Jewish" coffee cake in a bundt or angel-food cake pan, so this was a niace change, both the pan and the cake!

Maple Apple Crisp

The apple and maple flavours went so well together! I loved the delicous topping too. I served this with some vanilla ice cream after Sunday dinner and my family really enjoyed it. Next time, as I found it to be a bit runny, I will add a little less syrup(about 1/2 cup)but add some brown sugar(about 1/4 cup)to keep it sweet enough.

Shortbread

This shortbread was really nice! It was a beautiful golden color,and not too sweet-real shortbread. I wrapped the circle in red cellophane paper and gave it away as a Christmas gift. Four stars only because the dough was slightly dry, nothing that I couldn't fix by adding some more butter.

Chocolate Cupcakes

I loved the chocolate flavour of these low-fat cupcakes. I iced them with chocolate frosting and they were gone in a flash! I would have given these 5 stars, but I had to cook them quite a bit longer before they were done, also make sure you fill the muffin cups closer to 2/3 full, as this particular batter likes to rise a lot!

Cranberry Almond Biscotti

When I first made these, I had never done biscotti before, and I was afraid they would be a flop, but they were GREAT! I used the almond extract, and the only thing you need to do to these that is not in the recipie is to knead them for a few minutes when they are in the two seperate logs, or else the dough is a bit crumbly and unmanagable. I have made these twice now, and the second time, I dipped oneend in chocolate and gave them away to friends around the holidays, so pretty!

Rosemary Turkey Meatloaf

This was great, with a few alterations. I halved the balsamic vinegar, due to other reviewer's suggestions, and added less bread crumbs. I also used thyme instead of rosemary to suit my family's taste. This was moist, delicious, and smelled great in the oven! A keeper.

Lima and Navy Bean and Ham Soup

A good, hearty soup. The flavour was fantastic, even though i didn't have the sausage to put in. I used cooked ham left over from Christmas dinner instead of the ham bone, and that worked fine. Next time, for convience's sake, I may use canned beans, but the dried ones worked well too. I gave this to my brother ( a college student) to fatten him up, and he loved it.

Grant's Famous Midnight Grill BBQ Sauce

The reason I am giving this four stars is probably my fault! I only had a "mesquite" flavour bbq sauce on hand, which is not my favorite, so when I made it, the sauce had a lot of the mesquite flavour left over. Next time I will use a sweeter bottled sauce as a base for the wonderful array of spices in this recipie!

Sweet Potato Biscuits

MMMM! These were delicious home-style biscuits! I used leftover mashed sweet potatoes and carrots from Christmas dinner and they turned out beautifully! They had such a pretty golden orange color!

Cozy Cottage Beef Stew Soup

The flavour of this stew was amazing, and it was so nice to come home to the smell of delicious(but healthy) stew! The only thing I would change, is to reduce the amount of liquids, it was thicker than soup, but had just a touch too much liquid for the amount of veggies and beef.

Excellent and Healthy Cornbread

Great recipie! I wouldn't change a thing. I love the fact that there is no oil, it makes it AlMOST guilt free! This isn't as good the next day, so try to eat it all at once.

California Chicken Spaghetti

I loved this delicious, easy, healthy pasta dish! Instead of fresh I used whole,canned plum tomatoes, and broke them up slightly in the pan. I was afraid there was too many spices, but it was perfect! Next time I will add another can of tomatoes for a bit more sauce.

Molasses Sugar Cookies

These cookies were delicious! I made them at Christmas and they were moist, but not too soft. My whole family loved them, and they made the house smell even more like Christmas.These spicy cookies will become a holiday tradition in my home!
