Addictive Pumpkin Muffins

These were o.k. They had a funny texture, really sponge like. The flavour was nice, but I think I could find a better recipe. They weren't bad, but I probably won't make them again.

No Bake Camping Cookies

These were good, and easy too. They were a bit boring, so next time I might add some extra goodies like nuts, or chocolate pieces to the mix. I wasn't going to roll them in sugar, but I had to or else they would have melted in your hands!

Spicy Mango Salsa

This was delicous! I had to use canned peaches, because the fresh ones at the market were a bit scary, and dried ginger. I served it over grilled halibut, and it added a wonderful summery fresh flavour to the meal! A definite keeper!

Pork and Sea Shells with Summer Vegetables

This was really good! A nice fresh summer pasta recipie. I used broccoli instead of squash, whole wheat penne to make it a bit healthier, and two pork tenderloins instead of chops. It is a really low fat, but delicious recipie. I had to add a 28 oz. can of tomatoes though. This is definitley a keeper!

Beth's Spicy Oatmeal Raisin Cookies

These were my first attempt at oatmeal cookies and I LOVED them! I liked the flavour so much I even use the combination of spices and raisins when I make my oatmeal(porridge) for breakfast!

Chewy Chocolate Cookies III

So good! Really rich and chewy, so unless you are a chocoholic, these may be too rich. I looooved them and so did my whole family! I will definitley be making these again!

Banana Bran Muffins

These were really good and went fast. I used half butter and half applesauce to lower the fat and also to prevent oily muffins. I will make these again, only I will probably add some raisins or something to make them a bit more exciting.

French Toast I

I love the simplicity of this recipe! Just a few easy steps make delicous, good old french toast! Thick, "Texas" style bread works best I think.

Rice Cereal Energy Bars

These are delicious, and although they aren't low in fat or calories, they are a healthy boost of energy. I used half honey and half cornsyrup, , dried cranberries instead of cherries, and did not add the sugar in order to cut back on calories. I am glad I didn't, as they would have been way too sweet. Perfect snack for hiking, day trips, or busy events. I will definitley make these again.

Pan-Fried Steak with Marsala Sauce

These were great! Next time I will reduce the sauce a bit longer, as it thins out again when you add the butter. A perfect recipe for when the weather won't allow for outdoor grilling.

Microwave Lemon Curd

This was really good and simple to make aswell! I spooned it over vanilla ice cream for a quick but delicous sunday night dessert for the family. I also used it spooned over To Die For Blueberry Muffins(also on this sight) for dessert in a hurry. Don't be fooled by how runny it looks in the microwave, because it thickens as soon as it cools!

Mexican Whole Wheat Flour Tortillas

These were so easy and delicous too! Iloved how they had less fat and used whole wheat flour. I used my electric mixer to do the kneading for me and they worked out fine. I added some ground cumin, just for some more excitment, and make them a bit larger than in the directions. I will never buy tortillas from a store again! Thanks Claudia!

Blueberry Lemon Bread

I really enjoyed this bread. It was really moist, but it may have been a little bit too dense. The lemon flavour was just right, not too sour. It was good with the glaze, but is sweet enough to be served without it also.

Favorite Banana Blueberry Quick Bread

This bread was really good! It went fast at the workplace! Only complaint is that due to the oatmeal and the pecans, the top came out bumpy(the inside too), so it wasn't very pretty. Other than that, it was really enjoyed. I added just over a cup of blueberries.

Healthy Coconut Oatmeal

This was so good! It was the perfect sweetness and consistency. I didn't have enough milk, so I used some water aswell, and it turned out fine, still really creamy. I did not have the cranberries so i used golden raisins and dried currants, and it was really delicous anyways, but I would like to try the cranberries. This will definitley become a Saturday morning staple!

Emily's Famous Roasted Vegetable Salad

This was pretty good. Next time, I will adjust the dressing to better suit my tastes. Also, I used zuchini because there was no yellow squash at the store, and that worked great. I will roast the eggplant and zuchini a little less next time before adding the rest of the vegetables, as i found they were a bit over done, and the rest were a bit under cooked. Overall, this is a good basic recipie that I will make again, just with a few tweaks.

Award Winning Peaches and Cream Pie

I really liked this desert! I wouldn't call it a pie though! It was so simple, and delicous, evryone had seconds. Next time, to make it a bit "prettier" I may use brown sugar sugar instead of white on the top, and reduce the sugar/cinnamon topping, so that the cream cheese layer turns golden and you can see it. Other than it not being a "jewel" in the beauty department, this was really good!

To Die For Blueberry Muffins

These muffins really were to die for! I didn't have the large muffin cups, so I used a standard sized 12 cup one, but still filled the cups right to the top. I had to add a bit more milk to the batter, because it was about as thick as cookie dough, but other than that I did not change a thing. We ate these for snacks, but also , since they are so rich and cake-like, for desert, warm from the oven with a scoop of vanilla ice cream!
