Marinated Pork Tenderloin

Easy, delicious, and very impressive; looks like it took much more effort than it actually did. I serve this with garlic mashed potatoes and a nice garden salad - a fabulous meal!

Chicken Enchiladas V

This is now one of my family's favorites! I also add chopped black olives to the top when I bake, and then I put the cheese on top of it. I serve with a generous dollup of sour cream as well. YUM!!

Quick and Easy Fruit Dip

Very easy & so yummy! It was a bit thick for me, though, so I added a little more orange juice concentrate. I also added shredded coconut as an extra touch. I served it with strawberries, pineapple, grapes, bananas and apples. I will make this again for sure.

Comforting Cube Steaks

Delicious, and so very easy! I changed a few things...used McCormack broiled steak seasoning salt instead of the cajun stuff, and I dredged the meat in flour also. This made a lot of gravy, so the next time I will either cut back to just one can of soup, or make extra rice for leftovers. Even our two-year-old loved the meat, and she's kind of picky!

Microwave Corn on the Cob

This was good, but I still prefer boiling. I cooked 4 ears, and had to wind up microwaving them for close to 15 minutes; it really wasn't a timesaver, since I could have boiled them for that time. I'll probably boil them in the future, but it's nice to know that they can be done this way as well.

Cola Pot Roast II

Finally!! A pot roast that isn't dry, tough or tasteless! I have been searching for a yummy pot roast recipe for some time, and thanks to Sher, I can stop looking. I did change a few small things....I didn't add any celery (I don't like it much), I added two cloves of garlic and rubbed some of it in to the roast, and I used a roast that was about half the size. (2 1/2 lbs.) Due to that, I shortened my cooking time to 1 hr. 15 min. @350, and another hour @225. Perfect! Tender, tasty, and the gravy was nice and thick. I will prepare mashed potatoes along with this roast the next time I make it. Thanks!!
