Lemony Quinoa

I omitted the celery (husband doesn't like it) and subbed red peppers. I also sauteed the onions and red pepper in olive oil before adding to the quinoa. I thought this recipe was delicious. Light with a little bit of spice! Thank you.

Best Steak Marinade in Existence

Slow Cooker Buffalo Chicken Sandwiches

I make this without the dry ranch (I'm a bleu cheese gal). This is super easy to make and I let the slow cooker do it's thing while I'm at work. I always toast the bread and add bleu cheese crumbles and dressing on top.

Shrimp Scampi Bake

I thought this was really delicious. I increased the garlic a little bit, and used small shrimp, not medium - and everything turned out wonderful. I served this mixed in with angel hair pasta and topped with parmesan cheese. Next time I think I will add broccoli, zucchini and tomatoes to the pasta. The husband loved this as well!

It's Chili by George!!

I made this last night and my husband said it's the best chili so far. I did make a few changes: I substituted a can of petite diced tomatoes for the tomato juice - this made it a little thicker. I also browned the hamburger with 3 cloves of garlic and the chopped onions that the recipe called for. I cut half a jalapeno into tiny pieces and added a bit more cayenne because we like things spicy! I placed everything in the crockpot for 6 hours. Serve with sour cream, green onions,cheese and corn chips. Love this recipe.

Salsa Chicken Rice Casserole

I wanted to like this, I really did. But I wasn't impressed at all. I followed the recipe exactly. It tasted like mushy salsa flavored soup. I think if I had time to play around with this recipe a bit, it could be better, but as is - it's just lacking. I ate it, but I most likely won't be making it again. Sorry.

Spinach Tomato Tortellini

This was delish. I used a can of petite cut tomatoes, fresh basil, and also baked I baked one large boneless skinless chicken breast rubbed with salt, pepper and cayenne then added pieces of that to the pasta. Spiced it up a bit. I would say, make more sauce though if you're adding additional things to this dish. Otherwise, I followed this exactly and was very happy with the results.

Easy Iced Coffee

Perfect. I am 6 months pregnant, and have had a heck of a time drinking coffee... but iced coffee, specifically this recipe, gets me my coffee fix. I add vanilla syrup to it. Tastes like coffee shop quality! I'm one happy pregnant lady because of this! Thanks!

Chicken with Quinoa and Veggies

This was very good and I felt really healthy after eating it. I do not make my quinoa with chicken or vegetable broth - so I omitted that. Also, I forgot the lime juice.... and really have no idea if that would've helped or hindered this recipe. It was good as is. I also didn't have 4 oz. of feta, but I love feta so I would add more next time. I also omitted the tomatoes (don't care for them) and steamed up some broccoli and cauliflower instead, then sauteed them with the zucchini. I loved this recipe! Also, I added salt & pepper to my chicken while frying that. Please give this recipe a try! It is good!

Orange Romaine Salad

The husband didn't really care for this, but I thought it was fabulous. I added cinnamon sugar almonds to the salad and cranberries - otherwise everything was exactly as is. A tasty, light, refreshing salad for summer on a patio!

Honey Ginger Green Beans

This was delicious - I followed the recipe but only for 1 lb. of beans... and I also grated some carrots and tossed those with the beans when in the fry pan, which helped soak up the soy sauce and ginger flavor. My husband, sister and myself highly recommend these beans!
