Too Much Chocolate Cake

Reviewed: Mar. 21, 2011
Just made this cake for my DIL's birthday. Turned out delicious. Will definitely keep for future use. Only thing I changed was I used 1/2 cup applesauce and 1/2 cup oil rather than 1 cup oil. Cake was moist and didn't look or taste like a cake mix. Nine year old grandson asked me to write the recipe off for him for the Recipe Box I gave him.

Cranberry Nut Bars

Reviewed: May 16, 2011
The first time I made these they did not bake in the middle. The next time I made them I beat the eggs for three to four minutes (like you do for a pumpkin roll) then added the sugar slowly and they came out perfect. Most people I serve these to the first time request the recipe. I and my family think they are very good.

This is a very old recipe and very good. It was served at my wedding shower 48 years ago! Love the broiled coconut topping.

Cranberry Salad I

Reviewed: Nov. 19, 2012
Love Whipped Cream Cranberry Salad. The recipe I had the first time over 22 years ago was this recipe, except it had 1 cup of English walnuts instead of pecans and it had one up to two Delicious apples (chopped)added after you took the cranberry sugar mixture out of the fridge. I always make grind the cranberries, mix with sugar and sit over night. The next morning I assemble the rest of the salad. Definitely have to use real cream although one year I was dieting and used Lite Cool Whip. Gave me somewhat of the flavor but not nearly as good as with real whipped cream. I also only use 3/4 cup sugar and it is plenty sweet. Can hardly wait until Thanksgiving! This is a family favorite.

Chocolate Covered Cherries

Reviewed: Nov. 14, 2011
Made these CCC over the weekend. My fondant was 3 T butter, 2 T corn syrup and 2 cups sifted flour. Fondant made 26 covered cherries. I made this fondant again ending with 52 covered cherries. Froze cherries before wrapping fondant. Then froze fondant coverd cherries before dipping. Used 1 bag Nestles chips, 2 T shortening and 2 squares of White almond bark. Used stemmed cherries for ease in dipping. After dipped and set I pulled stem out, had to put on more chocolate to cover hole and then a little more chocolate on bottom (to prevent leaking). They are curing now. Husband tried one and said it was very good. I am going to wait a week, hoping the center is a little liquid by then. Very easy to do. Just very time consuming. I love chocolate covered cherries and tasting the fondant and chocolate, they have to be awesome delicious.

Amish White Bread

Reviewed: Jan. 21, 2008
I would give this 10 stars if I could. It turned out WONDERFUL! Yum ! I haven't baked bread for over twenty years. Thank you "Breadguy" for your comments. I did exactly as the recipe said, used a thermometer on the water. I did cut the sugar to 2 Tablespoons. The texture was great, color good. Will definitely make again. Maybe this weekend! Thanks to all for the recipe.

Lemon Pie Bars

Reviewed: Apr. 15, 2010
I made these for our Bible study on Friday and they were delicious. My other recipe was for an 8x8" pan. I didn't want to just double the recipe so I checked my trusty AR site and found this recipe. They were delicious. My husband couldn't stay out of the leftovers. Only difference I would make is next time I would only use 2 cups of flour. I also let them cool before I sifted the powdered sugar over the top. YUM!

Pizza Casserole

Reviewed: Oct. 6, 2008
Made this for dinner Sat night. Only changes I made was I used 4 cups dried egg noodles and didn't use the milk. I divided it into two casseroles, (one for later) and used the whole cup of mozarella cheese on the half I used. My hubby loved it and when I told my son what we had for dinner he was asking why I hadn't invited him. PS the leftovers heated up well in the oven too.

Peanut Butter Pie

Reviewed: Mar. 16, 2011
This is a really, really good peanut butter pie. And best of all, no cream cheese. It is very rich so you only want a small piece. Everyone who eats it wants the recipe!

Healing Cabbage Soup

Reviewed: Nov. 17, 2008
I am rating this 5 stars because just as it is, it is delicious. That being said, I did change a few things. I added 2 stalks celery, 3 carrots and 2 cups of lentils. I used chicken broth instead of water and bouillon and didn't add any salt. Next time I think I will use diced tomatoes instead of the stewed. I served it with cornbread and my husband kept mmmmmmmmmmmming. It very good. Our temps this weekend were in the 30s so the soup was very satisfying.

Slow Cooker Turkey Breast

Reviewed: Dec. 3, 2012
December 1, 2012. AWESOME! My turkey breast was 8 1/2 pounds so I had to make some adjustments. I cooked it on high for four hours and on low for four hours. In addition to the onion soup I added one eight ounce apple quartered, one medium onion quartered and a stalk of celery in quarters and one cup of water. The smell was wonderful as it was cooking. My oven was free to do all the other things I wanted. I could not believe how moist the turkey breast was and the meat was just as good the next day for turkey sandwiches. I don't think I'll ever use the oven again. If I could give ten stars I would!

Downeast Maine Pumpkin Bread

Reviewed: Nov. 3, 2008
Used a lot of the other reviewers suggestions, for instance, used 1 cup brown sugar and 1 1/2 cups white sugar. Used 1 cup applesauce instead of oil and 2 teaspoons cinnamon. It was good, however I thought it was way too moist. I would have like a little drier bread. Hubby thought it was good and he was born in MAINE !

Cheesecake Brownies

Reviewed: Aug. 11, 2008
These are good and quick, however I still like the "from scratch" one I have previously used. Taking suggestions from other reviewers, I added 1 Tablespoon flour and 1 Tablespoon butter to the cream cheese mixture. And, because my husband likes coconut, I added 1/2 cup coconut to the cream mixture also. I forgot to just put 2/3 of the brownie mixture in first and then the cream cheese and then the rest of the brownie mix. I would suggest you do this as it is easier to swirl in the cream cheese mixture. I used an 11x7 glass dish. Baked at 350 degrees for 40 minutes. They were good and we expecially like the coconut in them.

Easy Granola Bars

These were quick and easy to make. Reminded me of the 7-layer bars. I did leave out the chocolate chips. Only complaint is that they are a little crumbly. Definitely will make again and keep recipe.

Easy and Delicious Chicken and Rice Casserole

Reviewed: Mar. 9, 2010
Okay. I hate when people review but have changed the recipe, however, what I did turned out great and husband loved it. I cooked one cup minute rice, while it was sitting five minutes I cubed two large boneless skinless chicken breasts and browned lightly. By this time the rice was ready. I Pammed a two quart casserole. I mixed the Cream of Chicken soup, 1 pkg dry onion soup mix and one can of water/milk mixture all together. Then I placed a little of this mixture in the bottom of the casserole, layered in the rice, then placed the chicken on top. After that I poured the rest of the soup mixture over that. e chicken. Placed in a 400 degree oven for about 40 minutes. Served with green beans and it turned out delicious. Having leftovers tonight.

German Apple Cake II

Reviewed: Oct. 2, 2008
Made this cake last night. I used advice of other readers and used 1 cup brown sugar and 1 cup white sugar, 3 teaspoons cinnamon and used 3/4 cup applesauce and 1/4 cup oil. It was good when it first came out of the oven. I covered it after it cooled and this morning the cake was more moist as other reviewers mentioned. Its an okay cake but I'll probably won't make again. PS Brought it to work and the guys love it. But then they like anything anyone brings.
