I am 27 years old. I work part time from home and care for my 7-year-old. I am a pretty picky eater but working to expand my likes. But my hubby loves all foods and will try anything I cook! I don't cook just to suite me, many times I have come up with incredible recipes that I don't even like :P
My favorite things to cook
I love cooking everything! My favorite things are foods that require constant attention in the kitchen, or meals that I can cook within 1-1/2 hours. I like flavoring, and am perfecting my use of the more rare spices and herbs and incorporating them into my dishes.
My favorite family cooking traditions
My family is from West Virginia and we cook no bake cookies all year round. We call them "Mess Cookies." If the weather is not going to be good, they just don't set up. But we don't care; we'll just scoop them up with a spoon and eat anyway!
My cooking triumphs
When I find recipes that call for an encore, I try to make them several times a month. I become more efficient as I get the recipe memorized. I love being able to start pulling out the ingredients for a recipe when my husband tells me he's craving meatloaf. I love to make people happy; it's the reason I love to cook.
My cooking tragedies
I had one really bad bout with chicken and rice when I decided to try a new recipe. I thought it was alright, but my husband did NOT agree! I didn't even know my husband thought it was so nasty until a few months later when I brought up the subject of a repeat. He looked at me with a pained expression in his eyes and begged me not to EVER make that recipe again! I've also had my share of burnt foods, recipes that weren't specific when it should have been, and using substitutions that weren't the right thing.

Creamy Peanut Butter Fudge
Other than the bit of instructions that are not quite specific about cook time, this turned out perfectly. I made sure to start timing when a rolling boil was reached and used a candy thermometer as well. 7 minutes was perfect time. Remember do not stir at all while it is in the rolling boil stage. I mixed in the marshmallow creme first, then the peanut butter and vanilla. This all must be done quickly and poured out fast, so have everything ready. Very sweet, exactly how we love our fudge!

Sherry Apple Pork Chops
I cooked the apples first with extra brown sugar, cinnamon and sherry and added a bit of nutmeg. When the apples were pretty soft, I put them in the bottom of the pan. Then seared the pork chops, added onto the apples and baked for an hour. But the flavors are so amazing. The whole entire pan was eaten. Even my 5 year old ate the chops AND the apples.

Award Winning Soft Chocolate Chip Cookies
My son and I made these together, only half as much because 6 dozen is a LOT! But these were phenomenal. Sent some to the neighbors, they could smell them baking. We gobbled them up and then made another half batch a few days later. I made my own brown sugar with white sugar and molasses (works wonderfully) and followed the recipe exactly. This will forever be my chocolate chip cookie recipe!
