Classic Bran Muffins

Reviewed: Sep. 8, 2008
these might have tasted better if i had followed the recipe exactly, but i used another reviewer's suggestion and added cinnamon, which created an odd taste with the bran. however, my coworkers loved them.

Chicken and Sun-Dried Tomato Bruschetta

Reviewed: Sep. 8, 2008
we LOVED these. Very easy to make, and scrumptious! a few notes: i forgot to buy feta at the grocery store, so i just used mozzerella, which worked fine. instead of making bruschetta, we grilled foccacia rolls and made sandwiches for a full meal.

Classy Chicken

Reviewed: Aug. 27, 2008
we really liked this dish the first night, though the dill was a bit strong. however, we found it didn't keep very well. still, it's quite good right after it's cooked.

Amy's Barbecue Chicken Salad

Reviewed: Aug. 27, 2008
yum yum yum! i use half a head of red lettuce and half a head of green, and also add an avocado. instead of fried onions, i crush up tortilla chips. i usually let each person add his/her own dressing so that the salad keeps longer. i love it!

my boyfriend and i love this dish. we also use oregano and basil-flavored canned tomatoes to cut back on prep time. it's super easy and tastes delicious.

Garden Pasta Salad

delicious! i only used about 1 1/2 c. dressing, and i used whole wheat pasta. i also omitted the celery and used an entire cucumber and a red pepper as well.

Pineapple Chicken Delight

Reviewed: Aug. 27, 2008
it was very easy, and the hint about lining the baking dish was incredibly helpful, but this dish was too sweet for my taste. i would've liked a little more flavor to the chicken.

tasted fine, but tasted like honey mustard chicken--could barely taste the curry component.

Salsa Chicken

Reviewed: Sep. 18, 2007
we've been eating this forever and it's a staple--so easy and fast and all the ingredients are always on hand! we usually cut the chicken into small pieces, coat in taco seasoning, put in a casserole, throw on some salsa, cook 10-15 minutes, then add mexican cheese (just a grocery store mix) and crushed tortilla chips and throw back in the oven to melt the cheese. serve with broccoli and refried beans, and it's superb.

quite good. not as much banana flavor as i expected, next time might add more, but the topping worked really well with the muffins.

Delicious, and so easy! I use store bought bread crumbs and omit the bouillon (never have any stocked) but it still comes out terrific.
