Brown Rice Bake

Very good and economical. I added a can of diced tomatoes with green chilies and some garlic powder. It was like a casserole.

Bourbon Whiskey BBQ Sauce

I've put this on Sarge's EZ pulled pork (from this site) and baked chicken legs. I used Maker's Mark and a full teaspoon of Yucateco habanero sauce. I also cut the brown sugar down to 1/4 cup. Next time I will use a less expensive, but still tasty bourbon (Old Crow?) I think, if you like the taste of the bourbon as a drink, you will like the taste of the sauce.

Kathy's Baked Stuffed Tomatoes

This was really easy and tasty. I changed it up a bit by first blanching the arugula and squeezing the excess liquid out of it before throwing it in the processor and I omitted the feta and added a few extra tablespoons of parmesan.

Vegetarian Baked Pasta

I just served it to a group of friends and they loved it. I used fresh basil and the wonderful smell when it hit the pan got everyones' attention. The gorgonzola and portobello really work well together and make it very "gourmet."

Brown Rice and Black Bean Casserole

I omitted the chicken, doubled the rice, used cheddar cheese and added Southwest seasoning and also augmented the spicy factor with two sliced serrano peppers. YUM!!!

Slow Cooker Guisado Verde

It's still cooking away in the slow cooker, but I snuck a taste and WOW! I used chicken breasts, fresh tomatillos and instead of jalapenos I used a habanero because I like it spicy. I also used chicken broth, but only used 2 pints instead of a quart because I don't want it too soupy.

Habanero Pepper Cream Pasta

This was really good and spicy. I cut out a lot of fat by using 2 ounces of neufchatel cream cheese instead of heavy cream. Also, I used a can of diced tomatoes with jalepenos and 1 fresh habanero pepper from my garden. Next time I will add chicken to it.

Scrambled Eggs with Leek and Sauce

I liked it. It was cheap, filling and flavorful. It wouldn't be a stretch to add other veggies like sauteed spinach and mushrooms to it. I will definitely make this again.

Slow Cooker Cassoulet

I used andouille sausage and I browned all of the meat first. I also added a can of diced tomatoes to it. I think it needed that acidic bite to balance out the dish. I also added some bay leaves to it. It's delicious!

Minty Orzo Lentil and Feta Salad

Really tasty. I used french lentils (what I had on hand) and I used a mild feta cheese as opposed to a stronger feta. The milder feta cheese doesn't overpower the rest of the ingredients. I added lemon juice as others had suggested which brightened the flavor some. I think I used too much dill because it came out more dilly than minty. I guess I will adjust the amounts next time, even though I love dill, the mint didn't seem to come through. I will definitely make this again!
