Pesto Pasta
This was really great. I went with a whole onion, 3-4 T. of pesto, and about 4 T. of butter (since I was out of olive oil). The onion really made the dish. It was just perfect.

Creamy Apple Cinnamon Raisin Oatmeal
I made only slight changes to the original recipe: left out raisins, added the apple with the water so that it really got cooked, and cooked the oatmeal longer (about 10-12 minutes) so that it was done more to my liking. This could have been a bit sweeter. Next time I would add more brown sugar. I agree that it wasn't exactly creamy. I think the name is a misnomer and the recipe might get better reviews if people weren't expecting it to be creamy! But it was still pretty good.

Granola Bars III
This was a great recipe, although I did tweak it a bit for my family's needs. My daughter can't eat wheat, so I used 1 cup of finely ground oats to replace the flour, and 1/2 cup of almond meal (finely ground almonds) in place of the wheat germ. I used applesauce instead of oil as others had suggested, and used chopped almonds and dried cherries in place of the raisins & walnuts. And for the finishing touch, almond extract replaced the vanilla. These had a great consistency, nice and chewy, but not crumbly. I will definitely make these again!
