Easy Garlic Broiled Chicken

Family loved it! I followed suggestions to bake first, then broiled for 5 minutes on each side. I halved the butter, and used lower sodium soy sauce, with no skin thighs. Will make again soon, doubleing the recipe, to serve the leftovers on top of salad.

Quick Chicken and Noodles

Not Fancy, but it saved my bacon. I was running late, without a clue as to what to fix. My man wants his food by 5pm. I had chicken breasts, not fully thawed, noodles and broth. I key it in and found this. I pretty much made it as directed, and added a tsp. of poultry season. I dreaded the reactions, but they loved it and claimed it a keeper.

Cod Fish Cakes

I was looking for a recipe to use leftover fish....this was the closest I could find. I made this for lunch, and had a couple leftover, which became breakfast. I loved this! Can't wait to have fish again so I can have my fish cakes. I did add Old Bay and used chopped green onions instead of grated onion.

Chex® Muddy Buddies® -- Gluten Free!

ACCCCCCK!! I've read all the reviews, even went to the CHEX site....nowhere does it give the NON-Microwave instructions....and I know I made this before without a zapper. Love the recipe, not this method.

Baked French Fries I

These are family favorites. I pre-mix multiplied quantities of the seasonings, so all I have to do is put a couple Tbsp of olive oil in a ziplock, sprinkle in a good spoonful of the mix, add the potatoes and toss them around.

Gypsy Soup

My finicky sweetie just loved this. Never missed the meat. Hearty and delicious. I added extra sweet potatoes. I used a whole can of chickpeas, drained and rinsed. Two cans would work also. This will be regular winter fare.

Italian Spaghetti Sauce with Meatballs

I had every thing on hand to make this sauce. I used left-over meatloaf instead of the meatballs. It was so easy, and my guys loved it. Will never buy jar sauce again.

Dutch Beets

I am not usually a beet eater...but I accidently bought a jar of regular sliced beets, (for my hubby, who is), instead of pickled. Hating to waste them I tried this recipe...I had no problem eating these!

Hot Chicken Salad III

I have made this recipe about a dozen times in the last 3 months. It is 'one of life's simple pleasures'. I've used any precooked chicken, skin removed and de-boned as needed. I use brown rice cooked with chicken broth. I toast the almonds. A smaller jar of mushrooms is okay. I also add frozen peas or other froz veges to the mix. Important. DO NOT SUBSTITUTE the MAYO! The consistency is perfect due to mayo instead of milk. I find the measurements do not matter as much. I've used more rice, less chicken and it was just as good. My man looks forward to this and to the leftovers. He usually hates leftovers.

Hot Pork Salad Supreme

I was looking for a recipe to use leftover pork roast. I had most of the ingredients. I had to substitute cream of celery for the chicken soup. I used brown rice cooked with broth instead of the unhealthy white stuff. It was very easy to make. My man loved it. Will be making it again. Will also try with chicken, and will add frozen peas.

I've used this recipe many times. It's not only better than the others I tried, it the quickest also. I've been able to keep the same started going for months, but had to get a larger glass jar.

Easy Red Beans and Rice

I read other reviews, and here is my take: I used some chicken broth to fix the rice. I added Cajun Seasoning for flavor, and added shrimp, that had been shelled and rinced, about the last 10 minutes to allow it to turn pink and done. Also, if using brown rice, add more water and allow more time. I will be fixing this twice a month after this.
