About this Cook
I have been cooking most of my life because of my mom's love for being in the kitchen. Now I am all grown up with a daughter of my own. I don't shop nearly as much as my mom, but I have continued the tradition of cooking and baking with my daughter. I lost my mom a little more than a year ago, so cooking and baking are not only therapeutic, they make me feel closer to my mother. It is a tradition I hope to pass down for generations to come.
My favorite things to cook
Everything!!!!! I love to cook and bake, and do both a minimum of 4 times a week. I only wish I had a bigger family to cook for. I find myself cooking when I am bored or when I just want to relax. I am truly at peace when I am in the kitchen.
My favorite family cooking traditions
I come from a large family(1 of 9)and nothing brings me more pleasure than a family potluck gathering where everyone brings their favorite recipe!
My cooking triumphs
Pretty simply, whenever someone enjoys a meal I prepare.
My cooking tragedies
I was baking a quiche for my bf, and was getting ready to put it in the oven. I put the quiche on a baking sheet to protect from spill over and was headed to the oven just when my bf called my name. Forgetting I had the pan in my hand I spun around, the quiche slides and the entire pie plate crashed to the floor. It left me with a huge mess and no back up for dinner. Needless to say I was not happy!

Yummy Sweet Potato Casserole
I found this to be absolutely delicious! The only change I made was to substitute oats for the nuts as I have family members with nut allergies. I will definitely be making this again! Thanks for sharing!

Chocolate Chocolate Chip Cookies II
First let me say that I am NOT a chocolate fan...with that being said, these are the most decadent chocolate chocolate chip cookies I have ever tasted! As a personal preference I substituted milk chocolate chips for the semi-sweet and added salt to the recipe. They were sweet, fudgy chocolaty goodness! These were perfect!

Spanish Chicken and Rice
I made this for dinner tonight and it was delicious! The chicken was a little bland by itself but when taken with mouthfuls of the rice, it was perfect! The rice is something I would prepare even if I didn't make the chicken! I loved the ease of the preparation and enjoyed every bite. I cannot wait for leftovers tomorrow!
