Oven Scrambled Eggs
I'm so grateful to have found this recipe. It's made a huge difference in the mornings when we have a crowd of family in the house. I don't use nearly as much butter, sometimes add some sauteed vegetables or cheese at the end of the baking time, and sometimes I use buttermilk or some other milk-like substance for a little variety. I also adjust the number of eggs according to the mouths I'm feeding. It's perfect to get the eggs going while I bake the bacon - easy, delicious, and quick clean-up. Watch carefully, though, as the eggs go from nice and fluffy to dried out in no time, and if you use less butter you'll probably have to soak the dish.

Slow Cooker Boneless Turkey Breast
Really great. Definite keeper for guests or for a regular day. Plenty of leftovers, too. I added carrots, onion, and celery at the bottom of the pot, only used one soup packet, and rubbed some of the spice mixture under the skin. Just make sure your crock pot is big enough. Naturally that should go without saying, but ... sigh.

Quick and Savory Tuna Burgers
Fast, pleasing to the family, and not expensive, so I'll make them again. I thought I'd "grill" them in the Foreman ... if you have that thought, banish it. They fell apart, despite my tactics to hold them together. I also made them too big, which contributed to the falling-apart situation. Next time, I'll zing them up more with some deeper flavors (maybe curry), and I'll probably shred onion and zucchini and add them. I'll also cook them in a pan as directed and try not to be so clever. All in all, great recipe for a weeknight that uses ingredients I had on hand.
