Quick and Easy Mexican Chicken

An excellent recipe I serve over brown rice cooked with chicken boullion. If I don't have a lot of time to fuss in the kitchen, I slice each chicken breast in half width-wise, sprinkle with cumin and pepper and place in the baking dish (without frying first) with the salsa and cheese. It then takes about 35 minutes to bake, which leaves me free to do other things before dinner.

Bacon Mushroom Swiss Meatloaf

I agree that it was a lot of work for a meatloaf. I also added worchestershire sauce to the mix. It was pretty good, but the cheese was lost inside, so I think I would just stir in cubed cheese if I made it again.

Chocolate Wave Zucchini Bread

I've made this several times now and it's always nice and moist. I prefer to put the chocolate chips in the white side. Since I never seem to have pumpkin pie spice, I use cinnamon or nutmeg. Once I tried doubling the recipe. It turned out, but doubling the sugar was a bad idea - it was way too sweet.

Garlic Scape Pesto

I agree that it has a different texture than basil pesto. It was good on pasta and I also mixed a little into some chicken salad. It kept covered in the fridge for several days.

Chili Casserole

This recipe is so mch better than I expected. I made a few changes: I cooked the ground beef with taco seasoning rather than using taco sauce, I omitted the celery, used chili with beans, and used frozen corn rather than tinned. Very hearty!

Lemon Chicken Salad

Really fresh tasting for a spring lunch. I did make a few changes, though. It sounded like a lot of onion and my young son doesn't like it raw, so I omitted it. I used regular frozen green peas instead of snow peas. I also left out the lettuce and just served it with lettuce leaves on sandwiches.

Andy's Spicy Green Chile Pork

I made my own salsa verde to use in this recipe, so based on its ingredients, I cut down on the onion and cilantro called for. Also, the 2 whole chiles sounded intimidating, so I just included a small amount of chopped roasted poblanos instead. This was really good served on buns.

Easy American Potato and Tuna Casserole

Salsa De Tomatillo

I used roasted jalapeno peppers, which I find tones down the heat. I had leftover tomatillos from my CSA delivery in the summer, so I froze some and didn't need to boil them since they were soft after they thawed. This is great for dipping and I also used it in Andy's Spicy Green Chile Pork on this site as well.

Soy Ginger Salmon

I don't use garlic powder, so I minced a garlic clove instead. Also, I was lazy, so I just mixed all the marinade ingredients together in a measuring cup, stirred until the suagr melted, and poured in a zip bag with the salmon. We didn't broil the fillets, we just pan fried them. I thought this was very flavourful, but the salmon itself wasn't a big hit with my family, so I think I'd try it on another type of fish next time.

Stir-Fried Asparagus

I left out the onion (which my son doesn't like) and the parmesan (which I didn't have) and my husband and I thought this was pretty good. My son wasn't so sure. I'd make it again, though.

Quinoa Pudding

I used almond milk instead of whole milk. It didn't thicken so I stirred in an egg yolk and that did the trick. Nice flavour. A good cool weather breakfast.

Easy Italian Stuffed Shells and Meatballs

Everyone really liked this. I couldn't find stuffed shells, so I bought ricotta-asparagus cannelloni. I also used fresh mushrooms (way more than the tin suggested). I think this has a lot of potential to be customized by adding chopped bell peppers, different cheeses, or even turkey meatballs depending on what you feel like.

Almond Chicken Casserole II

I omitted the mayo and used a tin of cream of celery soup instead. I didn't have any celery, so I used sliced mushrooms. As per another reviewer, I used Ritz crackers instead of cornflakes to top it off. This was really good! Next time I think I'll make sure I have celery and I'll probably add other veggies as well - mushrooms again and maybe some chopped broccoli.

Orange Pull-Aparts

These were nice and light. We're not big icing fans so we left it off, but there wasn't enough sugar in the dough for our taste. I'll definately make them again and just add more sugar. I was making this for breakfast, so I prepared it the night before and left it in the bundt pan to rise overnight in the fridge, covered in plastic wrap.

Peanut Butter Banana Bread

I wanted to try a different banana bread recipe and tried this even though I was sceptical. This was a hit done a muffins for weekday breakfasts. I used 3/4c brown sugar and smooth peanut butter.

Chocolate Mayonnaise Cake II

I cut down the sugar to 3/4c and baked in a bundt pan. This turned out well served with whipped cream and berries. A good way to use up extra mayo.
