Strawberry Lemonade Ice Pops

Apple Strudel Muffins

I had to add about 1/4c milk to thin the batter so I could stir in the apples. I also found the batter rather plain so I added 1tsp ground cinnamon and 1/2tsp ground nutmeg. I then left the cinnamon out of the crumb topping.

Plum Cake

Farmhouse Barbecue Muffins

Peanut Butter Banana Bread

I wanted to try a different banana bread recipe and tried this even though I was sceptical. This was a hit done a muffins for weekday breakfasts. I used 3/4c brown sugar and smooth peanut butter.

Maple Syrup and Banana Sauce

As pancake topping for the 3 of us, I cut the butter, sugar, and syrup in half, but still use 3 bananas. I simmer for a little longer until the bananas are soft. Make sure you use really ripe bananas for a lot of flavour.

Chocolate Mayonnaise Cake II

I cut down the sugar to 3/4c and baked in a bundt pan. This turned out well served with whipped cream and berries. A good way to use up extra mayo.

Strawberry Oatmeal Bars

I used a 9x9 pan and they held together really well for snacking (but still a little messy due to the crumbly topping). As always, I prefer to use brown sugar in my baking. I used 1c of my remaining strawberry freezer jam from last year - I'm not sure how that's different from preserves.

English Muffins

I have made these a few times now. I'm lazy, so I use the dough cycle on my bread machine. Also, I bake them for 10 min on each side at 350. These turn out okay - they look like English muffins, but don't have the hole-y texture on the inside I like. To help with this I decreased the flour to 5c and increased the yeast. This certainly made them lighter and slightly more bubbly, but not like store-bought. They freeze well.

Cinnamon Syrup

This was good over french toast. We love cinnamon so I increased the amount to 1 tsp. This thickened really fast - it was thick almost as soon as it came to a boil.

Cabbage Roll Casserole

I didn't have tomato sauce so I used some canned diced tomatoes (not drained). I also added a little black pepper and garlic. Nice served with sour cream.

Crustless Cranberry Pie

This was super easy to make but looks festive with all the bright red berries. I used frozen berries and the batter was extremely thick (I really had to spread it around in the pan), but it baked nicely.

Crusty Potato Bread

This turns out perfect every time. I use the bread machine to make the dough and then I bake it in a loaf pan. I took the advice of other reviews and reduced the flour to 3c and increased the potato to 3/4c.

Salsa De Tomatillo

I used roasted jalapeno peppers, which I find tones down the heat. I had leftover tomatillos from my CSA delivery in the summer, so I froze some and didn't need to boil them since they were soft after they thawed. This is great for dipping and I also used it in Andy's Spicy Green Chile Pork on this site as well.

Pineapple Bread Pudding

I reduced the eggs to 4, the butter to 1/2c, and added some milk. I cut the sugar in half because I wanted this for breakfast - it's like having baked french toast. I didn't serve with whipped cream. It was a really nice twist with the pineapple.

Andy's Spicy Green Chile Pork

I made my own salsa verde to use in this recipe, so based on its ingredients, I cut down on the onion and cilantro called for. Also, the 2 whole chiles sounded intimidating, so I just included a small amount of chopped roasted poblanos instead. This was really good served on buns.

Soy Ginger Salmon

I don't use garlic powder, so I minced a garlic clove instead. Also, I was lazy, so I just mixed all the marinade ingredients together in a measuring cup, stirred until the suagr melted, and poured in a zip bag with the salmon. We didn't broil the fillets, we just pan fried them. I thought this was very flavourful, but the salmon itself wasn't a big hit with my family, so I think I'd try it on another type of fish next time.

Breaded Toasted Ravioli

These were okay. I used a whole egg for the egg wash. They puffed up quite a bit and some went hollow inside, but that might as much the fault of the ravioli as the baking. Interesting finger food though.
