Cajun Crab Soup

Reviewed: Sep. 3, 2010
this was really good. i think i like the salmon chowder (replace salmon w/ a lighter fish and crab) by KENULIA a little bit better than this recipe. if i could combine the two, that would be perfect. the crab and cream from this recipe and the seasonings, celery, and red potatoes from the other. this was great. thanks for the recipe.

Watermelon Fire and Ice Salsa

Reviewed: Sep. 3, 2010
this was amazing! it was a big hit at my pool party. so refreshing on a hot summer day in Florida. i highly recommend chopping this the night before, draining it the next day, and THEN add the other ingredients. i drained as i chopped, added the ingredients, and thought it would be fine, but had watermelon soup the next morning (it is WATERmelon, after all). by the time i drained it, i feel it diluted the flavors, so definitely let sit overnight, drain, and then add other ingredients. if possible, let that sit for a few hours in the fridge so that the ingredients can meld well before serving. it was fun to serve this in the watermelon bowl as well. i added in quite a bit of garlic and garlic powder.

Guacamole

Reviewed: Sep. 3, 2010
i can't believe i like guacamole! wow! i've never liked guacamole! i decided to try this because everyone tells me that i'd like guacamole if i found a good homemade fresh recipe, and they were right. i didn't even know what a avocado looked like until today and had to watch a video to figure out how to peel and seed it, haah i ate about half the batch! so good! thanks for the recipe. will make again!

Ham Breakfast Braid

Reviewed: Jul. 5, 2010
this was sooo good. pretty easy too. i may make scrambled eggs more often with cream cheese, yum! i took other reviewers suggestions (adding seasoning) and added minced dried onion flakes, garlic powder, and plenty of salt and pepper. i baked this on a pizza stone as another reviewer suggested, and the bottom dough came out only slightly raw, but i was ok with it because it was cooked on the outside and just a little doughy on the inside. also, it stuck just a little bit to the pizza stone, but dont think i can oil the stone. really really good. even FIL loved it. may become a brunch staple. will make again and again.

Sukhothai Pad Thai

Reviewed: Jun. 21, 2010
i couldnt find the tamarind pulp, so i just went with thai sauce i found at the store, which was very good, but i should have used more. also couldnt find the oriental radish, but flavor was not the issue i had with this recipe. the problem i had with this recipe was the rice noodle were mushy. i think i should have soaked them until al-dente, instead of soft, because it just turned into a mush ball when i tried to heat through on the skillet. also, is there a way to make bean sprouts slighly soft? they were quite stiff (got fresh bean sprouts in the produce department) while the rice noodles were too mushy, so it was a weird combination. i also added a couple of tablespoons of cilantro, which was really good. oh, also used chicken instead of tofu. may try again with a few tweaks, not too sure.

World's Best Lasagna

Reviewed: Apr. 7, 2010
this was great. i will make the sauce on its own also for spaghetti and other recipes that call for marinara. for the step that says 6 noodles in one layer, they have to be stacked in a 9x13, so i don't think i will stack them next time. it was too noodley. i also ended up with a ton of sauce left over.

Herb Baked Eggs

Reviewed: Mar. 28, 2010
i think i will broil these on medium vs. high next time. the butter/cream was too browned and the eggs were overdone! i also popped a yolk dangit. will try again. update: there is no medium broil, so baked on low 6 minutes and they turned out perfect. 4 eggs in big skillet with full amounts of seasoning. still want to try with fresh herbs. forgot the salt and pepper this time, but think i may prefer it.

Fiesta Stuffed Peppers

Reviewed: Feb. 22, 2010
i think this was a good base recipe, but needed something extra. maybe more ingredients (cheese, sour cream, garlic, cilantro) should have been mixed in the stuffing? not too sure. will probably make again with additions.

Pork Chops with Garden Rice

Reviewed: Feb. 19, 2010
this wasnt for me. i really liked the seasoning for the pork chops, as simple as it was. i guess im just not a big fan of tomato and rice... kinda tastes like spanish rice, which i personally dont care for.

Andouille and Chicken Creole Pasta

Reviewed: Feb. 9, 2010
this was sooo good. i'd say it was about 4.5 stars. i only used half the recommended creole seasoning, and it was still very spicy. used 33% less sodium chicken broth. i also, love the consistency, but i think i may use a little cream (vs. water + starch) next time. instead of water, i used 1/2 c milk and starch. just a thought. thanks for the recipe.

so good. i only used 1/2 the amount of paprika and added in 2t of flour to the simmering sour cream sauce to thicken. would have been a little better with mushrooms.

Sloppy Joes II

Reviewed: Oct. 31, 2009
the ingredients in this recipe were great, but not nearly enough, and i did tweak them a bit. i used 1.15 lbs of lean ground beef and needed to double the sauce. i feel like it could have used one more dose of sauce. i also added 2 t of minced garlic and 2 t of worcestershire sauce. cooked the beef in a skillet and then added everything to a slow cooker on simmer for 4 hours. so good.

Sour Cream Pork Chops

Reviewed: Mar. 7, 2009
these were sooo good. we served this over white rice which mixed well with the sauce. the sauce tastes like a really yummy pork chop gravy. i may add red peppers or something else to give it a bit of color next time and definitely some sliced mushrooms. thanks!
