Simple Carnitas

We used this recipe for a "drive-thru dinner" fund raiser. Instead of cutting the meat and putting it in a dutch oven, we put the whole pork roasts in large pans. We then put water about half way up, covered, and cooked at 350o for 2 hours. They came out perfect. Although we gave an option of salsa or bbg sauce, the meat really did not need it. The flavor was great. My boyfriend who is picky made sure I saved this recipe.

Balsamic Vinaigrette

I like this for my regular dinner salads. I also sweeten it with a little honey, sugar, or Slenda (roomate is diabetic) and I use it over mixed greens with sliced strawberries and blueberries and feta cheese. The berries add their own sweetness so don't oversweeten the dressing. We have this as a lite summer meal on hot days.

Black Bean and Corn Quesadillas

We love these and have used this recipe several times. I halve the sugar. I skip the red pepper flakes and put in a chopped jalepeno. I serve these with salad or veggie soup, and fruit or sorbet for dessert.

Chile Cheese Squares

Just a funny note. First,the picture shows it in a round pie dish, but it talks about cutting it into squares. Second, it makes "seven cups" ??. So how big are the squares to equal calorie count per serving? I'm going to make this because it sounds great. But can someone proof-read the page.

Freezer Peach Pie Filling

I had 6 cups of sweet peaches. I doubled the cornstarch and tapioca, added only 1 cup sugar and 3 tsp fruit fresh. I divided it and froze it in containers. However, I kept a little over 1 cup out. This morning I cooked it stove top slowly adding water (about 1/2 cup). I made pancakes, spread them with softened cream cheese and topped with the peaches. They were delicious. I think I may do try this as a cheese cake topper.

Asian Coconut Rice

I liked the "idea" but did not want the high saturated fat content of coconut milk. I used coconut water for all the liquid (omitting sugar, c. milk, and water). I also added some fresh grated ginger. The rice had a slight sweet taste to it and went well with Hawaiian Chicken Kabobs. My man doesn't like "plain" white rice, but loved this. FYI, Coconut water is high in potassium and vitamin C and has 0 fat.
