Thai Chicken Cabbage Soup

Loved it. We used 2 heaping T of the sweet chili sauce and a large onion instead of the leeks. I tasted it before the chili sauce and it was chicken noodle soup. After the sauce it was asian.

Quinoa Side Dish

I made it as directed and loved it then I cooked it all up in one pot and liked it better and it was easier. Sautee the quinoa, add a large onion chopped and 2 carrots chopped fine and sauteed more. I added one 14 oz can chicken broth instead of 2 c vegetable brothand the seasonings. This was fine. I figured the large onion added enough moisture. Cover and cook 20 min.

Chocolate Scotcheroos

I bring to a boil for 1 minute. When you put the chocolate chips/butterscotch on you can just pour over warmed mixture and they melt and you can spread from there. My daughter can't have chocolate, these are great without the frosting too

Salmon Pasta Salad

I made this several times with leftover salmon and used whole wheat noodles, 1/2c olive oil and added marinated artichoke hearts. One time when I didn't have the cherry tomatoes, I used canned diced tomatoes and rinsed them,I added the juice... still yummy. I have added diced carrots, edame. Whatever you like. I have to double this. I omitted the lettuce but my niece gets lettuce out and loves it with. This is a keeper, my husband goes to Alaska and I am always looking for salmon recipes.

Crustless Spinach Quiche

yummy... I broke the cheese down to make it lower fat: 2 C. cottage cheese, 1 C. shredded cheddar. I used 3 eggs and 4 whites and one large onion. cooked 5 min longer. It was great cold the next day and the next.

Oven Roasted Potatoes

yummy, this is a keeper. I didn't use the crushed red pepper flakes and added more salt. I put all ingredients in a ziploc bag, mixed by kneeding and added the potatoes to coat. I used red potatoes and didn't peel them

Elk Chili

This was great, I too put half the brown sugar in. I added an extra can of kidney beans. It is thick. We ate it using corn chips to scoop it up. A great way to use Elk.
