Tex-Mex Beef and Rice Casserole

Wonderful! Healthy and economical. I used brown rice instead of white and increased the amount of shredded cheese. If you don't have the cooking cream, just warm up some cream cheese in the microwave for about 15 seconds and whip it with some chili powder and paprika.

Beef or Chicken Enchiladas

This dish was really good with a few changes. I liked the amount of onion, but it needs to be chopped finely. I also added 1 tsp tobasco for more flavor, added a little more salt and cumin than called for, and an extra can of green chiles. I also used 1.5 Tbsp of cornstarch instead of flour as other reviewers suggested. I got 6 decently sized enchiladas using 2 cups of shredded chicken and 2 cups shredded cheese and all of the sauce.

Sun-Dried Tomato Hummus

This recipe was absolutely delicious. I've tried many different variations of hummus but this one is my favorite. The only thing I changed was to use the oil from the sun-dried tomatoes jar instead of regular olive oil. It really gives it the kick of sun-dried tomato flavor. Thanks for sharing the recipe!

Chicken Marsala

This recipe was absolutely delicious. I didn't have cooking sherry so i just added more marsala wine. Next time though, i think i will cut the oil and butter in half. there was a lot of grease left in the pan after cooking that i didnt want in the sauce.

Awesome Sausage, Apple and Cranberry Stuffing

WOW, this stuffing was AMAZING! I've never made stuffing before but this is what i will make from now on. I made a double batch for the first thanksgiving i ever hosted and everyone loved it. There was hardly any left. I used white and wheat hoggie rolls for the bread and cut them into roughly 1/3 inch cubes. I toasted them the night before and let them sit out so they were very dry. I baked it for an hour at 350 degrees and stirred it after 30. Thank you so much for this recipe!

Pumpkin Cheesecake in a Gingersnap Crust

I had never made a cheesecake before, and this one turned out wonderful! I replace half of the cream cheese with reduced fat and the other with fat free. Never missed the flavor. I even brought it to work and they didnt believe me when i told them. Thanks!!

Crusty White Bread

This was an excellent bread recipe. I added 1/2 cup more flour, added 2 tablespoons of dried rosemary, and brushed with milk instead of misting with water. It turned out absolutely delicious and the crust had the perfect texture.

Chicken Curry III

I didnt have all the right ingredients, so i did the best with what i had. I used powdered ginger instead of fresh, increased the milk, yogurt, and water to make up for not having coconut milk, and added more curry powder, plus some cayenne. The result was delicious, even with the changes! A good, easy recipe.

Garlic Shrimp Linguine

Great recipe! I didn't have fresh shrimp, only frozen so I thawed it by soaking in rounds of cold water and added after drying them off. I also sauteed the garlic in the butter before adding the wine and cheese. Delicious and easy - will definately make again!

Oatmeal and Wheat Flour Blueberry Pancakes

Tasted pretty good. If I make this again, I will increase the amount of sugar and drop the blueberries onto the top of the pancakes before flipping so they do not turn an ugly brownish blue.

Flourless Peanut Butter Cookies

These cookies are excellent and so easy to make! I rolled them into small balls and pressed them down with a fork for the classic criss-cross pattern. They are very easy to work with and tasted very peanut buttery. I think I'll try leaving them in balls next time and see how much they retain their shape. Thanks Stephanie!

Pumpkin Cream Cheese Muffins

YUM!! These muffins are very good and very pumpkiny. The topping was more pasty than crumbly, but still very good. I didn't use paper cups either, just buttered and floured the muffin pan. I found that if you cover the cream cheese with some of the batter, you get the desired filling effect instead of an icing. The dough is very sticky, but it makes it easy to mold and form a well for the cream cheese filling. Definately a keeper.

Raspberry and Almond Shortbread Thumbprints

These cookies are excellent! It took me a couple tries to get the depth of the thumbprint just right. Definately make the dough balls 1.5" and the hole shallow and wide leaving about a quarter inch of dough at the bottom. Also, do not forget to let the cookies cool ON THE SHEET before removing. I cooked mine until the edges were golden and let them sit about 5 minutes to let them firm up.
