Super-Delicious Zuppa Toscana

THis soup is outstanding, hearty and oh so good on a cold winter night- a classic Italian peasant soup. After reading a bunch of reviews, I adapted the recipe, many thanks for the tips! I used mild Italian poultry sausage patties, instead of pork, and kale instead of spinach. I chunked my potatoes instead of slicing them. I omitted the milk/heavy cream because I forgot(in the end its excellent without it)! With the potatoes in the soup for thickener. I served it with a side salad, and hearty 9 grain bread. With this Polar Vortex swirling through upstate NY for the third time this winter, this soup is perfect to warm you up and fill your tummy with amazing comfort food!! Thank you!

French Breakfast Puffs

My family and friends loved these morsels! Yes they taste a bit like a snicker doodle, excellent! We loved the bit more dense more texture, not quite a biscuit. Followed the advice of other reviewers by brushing the tops of warm muffins with butter and sprinkling on cinnamon sugar. That worked great and tasted great too. We also added frozen blueberries to a batch. Obviously extending the baking time since they are frozen, but it was a delicious add. We backed them as mini muffins in the oven and in my daughter's Babycakes electric muffin maker. Loved the baby cakes outcome, it was a fatter muffin with a crispy top of the muffin as the top gets baked too when the top is in place. Would use Babycakes again. All in all, this recipe is a total keeper!

Grilled Pineapple

I haven't tried this version yet but I sure will. I do have to recommend a quick recipe that a friend gave me last summer. 3 ingredients, fresh pineapple, dark rum and brown sugar......trim the pineapple skin off, after removing the top and bottom. cut the remaining large piece in half. core it by making two angled cuts into the core. then cut the pineapple into spears from top to bottom. You will have at least 10-12. Marinade the pineapple spears in rum for a few hours with brown sugar sprinkled over the top. Grill until 2 minutes per side, serve with vanilla ice cream. Company and husband alike raved about it!!!!!!
