Peanut Butter Pie I
This is by far the winner of the pies I made for Thanksgiving dinner! It truly, truly was! While at the store, my guy called to ask what kind of peanut butter I wanted since we usually buy honey roasted. On a whim, I told him to pick that up instead of regular peanut butter. Since I used peanut butter with a bit of honey in it, I cut back on the sugar by 1/4 c - 1/2 c. So I had to taste it to make sure that it was sweet enough. Oh my! It was all I could do to keep myself from plopping down in the middle of the kitchen and just eat the whole bowl! I did use a store bought graham cracker crust though. Everyone raved about it at dinner. It's very, very rich so just a sliver is enough to satiate. If you like peanut butter and sweet things, this is absolutely a must to make. Prep was fairly simple, too. No baking involved which is always welcome.

Libby's(R) Famous Pumpkin Pie
This is the quintessential pumpkin pie recipe. It is easy to make and nearly fail proof. It's so easy that I would trust my guy to make this and he is not a baker at all. I only gave it 4 stars as a changed a few things. I only used 1 cup of evaporated milk which made for a more substantial filling that did not melt as it set out. I will likely increase it 1 1/4 cups, the next time. The full 15 oz can of evaporated milk is a bit much. I also decreased the spices by nearly half as I wanted the pumpkin to shine through. In all, it was a nice pie and one that is easily modified.

Thai Pineapple Chicken Curry
This recipe yields a lot of sauce which will most likely go to waste for me. I did not add the veggies as I didn't have time to prepare them. However, this dish turned out okay. It was a bit bland until I added some soy sauce. The soy sauce gave it a good depth of flavor. After the soy sauce was added, it was quite yummy.
