Zucchini Pasta II

Reviewed: Jun. 29, 2015
I was trying to use up some zucchini before I left for vacation and also some bacon. I crumbled up a bunch of bacon pieces into this pasta and wow! Bacon, bacon, bacon with this dish is excellent! I will be making this again. It's a perfect pasta dish and really many things can be added into it. I am excited to try mushrooms. It is a must to double the zucchini.

Quinoa with Sweet Potato and Mushrooms

Reviewed: Jun. 16, 2015
There were a few reviews that said to add cinnamon and I did, it was good! I got a little crazy and added some brown sugar. Wow, that added the complexity I was looking for. It was sweet, spicy, and perfectly seasoned.

Grandma Jeanette's Amazing German Red Cabbage

Reviewed: May 24, 2015
I like my veggies cooked so they are soft and crunchy. You lose so much nutritional value by cooking too long. Cabbage has a lot of nutritional benefits. I cooked mine maybe 20 minutes so the cabbage was crunchy and the apples were soft. It turned out great! Next time I might use Bragg's Apple Cider vinegar with a more natural sweetener.

Quinoa Tabbouleh

Reviewed: Mar. 11, 2015
I've made this recipe a number of times, each time I felt like it was missing something. This recipe is great if you add feta cheese. One time I didn't have Fetta Cheese so I added apples and raisins, and it was pleasantly wonderful!

Penne with Spring Vegetables

Reviewed: Jan. 18, 2015
Very plain tasting pasta. I'd thought it needed a white sauce or maybe some pesto to jazz up the flavor.

Mango, Peach and Pineapple Salsa

Reviewed: Jan. 10, 2015
I leave out the red and yellow bell pepper and throw all of it in food processor. It saves lots of time and you still get all the wonderful flavors! I've made it a few times and the last time I substituted frozen mango and peaches that I let thaw a bit, and it's just as good.

Barbie's Tuna Salad

Reviewed: Jan. 10, 2015
Mix all ingredients and add the mayo in last. I always add more seasoning than called for. I've made this twice and now I just eyeball what I want it to taste like. It's sweet from the relish, and the curry adds a nice punch. I really like this Tuna Salad!

Ropa Vieja in a Slow Cooker

Reviewed: Jun. 15, 2013
It wasn't very flavorful. I ended up adding cumin, coriander, and paprika which made it a lot better. I eventually added barbecue sauce and made a bbq sandwich.

Addictive Sweet Potato Burritos

Reviewed: May 27, 2013
This was way better than expected! I'm on a health kick and I am terrified of eating less meat, but this burrito didn't bother any of us as far as flavor, we all loved it. I used about 4 good sized sweet potatoes, boiled them and mashed them. I used about 3 cups of kidney beans and added almost all of full seasoning and the beans were flavorful. I used 1 cup of water and it seemed like too much so I strained out the water until the beans were thick. Good stuff!
