Quinoa Tabbouleh

I've made this recipe a number of times, each time I felt like it was missing something. This recipe is great if you add feta cheese. One time I didn't have Fetta Cheese so I added apples and raisins, and it was pleasantly wonderful!

Penne with Spring Vegetables

Mango, Peach and Pineapple Salsa

I leave out the red and yellow bell pepper and throw all of it in food processor. It saves lots of time and you still get all the wonderful flavors! I've made it a few times and the last time I substituted frozen mango and peaches that I let thaw a bit, and it's just as good.

I leave out the 3/4c of water and red/yellow bell peppers and add jalapeño and throw all of it in food processor. It saves lots of time and you still get all the wonderful flavors! Barbie's Tuna Salad

Mix all ingredients and add the mayo in last. I always add more seasoning than called for. I've made this twice and now I just eyeball what I want it to taste like. It's sweet from the relish, and the curry adds a nice punch. I really like this Tuna Salad!

Ropa Vieja in a Slow Cooker

It wasn't very flavorful. I ended up adding cumin, coriander, and paprika which made it a lot better. I eventually added barbecue sauce and made a bbq sandwich.

Addictive Sweet Potato Burritos

This was way better than expected! I'm on a health kick and I am terrified of eating less meat, but this burrito didn't bother any of us as far as flavor, we all loved it. I used about 4 good sized sweet potatoes, boiled them and mashed them. I used about 3 cups of kidney beans and added almost all of full seasoning and the beans were flavorful. I used 1 cup of water and it seemed like too much so I strained out the water until the beans were thick. Good stuff!
