Happily married. After 20 years of hard time in the office of another company I have finally broken free and I am helping my husband run our business but I get to do it from home! So as a thank you I'm trying to be an even better wifey and start learning more about cooking so I can have a nice dinner for my hubby and I when he gets home. I'm fiercely independent yet it feels good to do nice things for the one you love the most.

My favorite family cooking traditions
I recently lost my father and I have fond memories of him teaching me to make some of his favorite dishes like Shepherd's pie or his meatloaf. I also enjoy making my mother in law's mac-n-cheese. Very difficult and decadent, just like she was. We fondly call it bitchy mac n cheese, and that's just how she would want it.

Slow-Cooker Lasagna
So this was my second dish from allrecipe.com and I have to remember to adjust the number of servings. Whoops! There are only two of us yet I keep cooking for eight! Anyway as a result I adjusted the recipe and used the following Two 8oz jars of sauce, 1 pound of ground beef, added onions sauteed with onions in butter, olive oil, salt, pepper and sugar until tasty. Layered as directed in slow cooker and still used the the 8 serving cheese portions. The result was a meatier and cheezier and yummier lasagna and a happy hubby who ate it up after coming home from the gym. Served with caprese salad with fresh basil from the window sill and garlic knots from the freezer :o Will make this again for sure but still have a ton left over so I'll make it for family dinner on the weekends. Make it and enjoy!

Slow Cooker Chicken and Dumplings
I tried this recipe today and the hubby and I both really enjoyed it. This was super easy to make. But I did add some salt and mixed in before adding the dumplings otherwise it would have been bland. This also goes really well with some corn mixed in as I discovered once it was all on the same plate. Try it - you won't regret it!
