Yes I did make 5lbs of lasagna for just the two us....what's your point?

So the slow cooker lasagna was my second dish from allrecipe.com and I have to remember to adjust the number of servings. Whoops! There are only two of us yet I keep cooking for eight! Anyway as a result I adjusted the recipe and used the following

Two 8oz jars of sauce, 1 pound of ground beef, added onions sauteed with onions in butter, olive oil, salt, pepper and sugar until tasty. Layered as directed in slow cooker with lasagna noodles and still used the the 8 serving cheese portions. 

The result was a meatier and cheezier and yummier lasagna and a happy hubby who ate it up after coming home from the gym. Served with caprese salad with fresh basil from the window sill and garlic knots from the freezer :o 

Will make this again for sure but still have a ton left over so next time I'll make it for family dinner on the weekends. He was laughing at me and waiting for the other 10 people that must be coming for dinner. Humph

My husband sure seems happy about me being more domestic and I'm sure it's nice for him that he doesn't have to worry about what's for dinner each night. 

Won't be doing any new recipes until Monday. Having a big pool party cha cha at our house on Sunday and as the head count went up I decided call in the Mexican Buffet caterer and enjoy the party instead of working the whole time! In the long run it costs less anyway so double Yay!

We are new empty-nesters and I still prepare too much food for every meal! When I make lasagna just for the two of us, I freeze the leftovers. It reheats well. Have fun at your pool party - enjoy your guests and let the caterers do the work!

I'm enjoying reading your blogs. Looks like you are off to a great start with cooking. I love that servings adjuster on the recipes. It really helps...when I remember to use it :)

I can empathize with cooking more than needed. There is just my husband and me. I have to remember to use the recipe adjuster, too. Meanwhile, sit back, relax, enjoy the pool party and let the caterer worry about the menu.

Just remember that when you make a lot, you can have some leftovers some night when you don't feel like cooking. Instead of calling for pizza, you can defrost.

About Me
Happily married. After 20 years of hard time in the office of another company I have finally broken free and I am helping my husband run our business but I get to do it from home! My favorite family cooking traditions
I recently lost my father and I have fond memories of him teaching me to make some of his favorite dishes like Shepherd's pie or his meatloaf. I also enjoy making my mother in law's mac-n-cheese. Very difficult and decadent, just like she was. We fondly call it bitchy mac n cheese, and that's just how she would want it.
