Taffy Apple Cake

While it does take a while to make (especially cutting the caramels) this recipe is well worth it! Keep in mind it is sweet and dense but really good - smaller portions recommended. One of my husband's single guy friends even buys me the caramels so that I will make the cake!

Sour Cream Chicken Paprika

This tasted really good. Only issue was that it didn't thicken. Nonetheless I am looking forward to leftovers tonight! One thing I did do was keep the juices from the chicken in the recipe and reduced the broth to 1.5 cups. Also added a red bell pepper and hot pepper flakes for spice (didn't have any cayenne on hand). Thanks for the recipe!

Roasted Red Pepper Cream Sauce

I have made this twice. Both times it tasted great. The first time was a little runny so the second time I used three peppers instead of 2. I use cream instead of half-and-half and only used 1 1/4 cups, and I can't get romano cheese here (China) so used a combo of mozzarella and parmesan. All-in-all a great recipe - the only down side are the dishes :o)

Macaroni and Cheese Bake

This isn't bad, it just isn't great. One benefit is that it makes a lot and is good for leftovers. One thing that I did that my husband liked was add breadcrumbs to the top.

Raspberry and Almond Shortbread Thumbprints

These are incredible! I made them for my co-workers, for a Christmas party, and for a cookie exchange and haven't heard anything but praise. I did use vanilla extract instead of almond and I didn't glaze all of them - they were great either way! Thanks Dee.

Easy Sugar Cookies

Well, I am gearing up for a bake sale with the youth from our church so there will likely be a lot of cookie reviews from me today. These were great! So easy to make. My only complaint is that my hands hurt from rolling the dough into balls.

Sour Cream Chicken Quiche

I love quiche and have been a staunch fan of the ham/bacon and cheese variety. This is both mine and my husband's new favourite! Used sharp cheddar and mozzarella, and chilli powder instead of nutmeg.

Curried Coconut Chicken

I'm giving this recipe a four because I would have given it a three but my husband gave it a five so that's the average :o). Couple of variations - I cut back on the sugar A LOT (maybe used one teaspoon) and I added potato since I had that around. I found the consistency fine but if I make this again I will cut out the tomato sauce as suggested. My main complaint is that I couldn't taste the coconut - I think all the tomato overpowered it. Very easy to make though.

Rainbow Pasta Salad II

I don't like any pasta salad but everyone that ate this loved it. Only reason it didn't get a 5 was that there was still some left over at the end of the night. This may be due to the fact that it makes so much! I think it is more like 12-16 serves than 8. Especially if you are using this as a side dish.

Mouse's Macaroni and Cheese

I made a few changes: I doubled the pasta (could have added even more no problem) and I had to use all cheddar (can't get velveeta here) but it was still awesome! Thanks for the recipe.

King Ranch Chicken Casserole II

I'd never heard of this casserole but thought I would give it a shot. Very yummy but you need to add more crushed chips on top each time you have it for leftovers for extra oomph :o)

Hearty Mince

So I've already reviewed this once. Just wanted to say that I add two carrots, two zucchinis, and a red pepper (all diced) to my mince. An easy way to get kids (and my husband) to eat veggies.

Lime Chicken Soft Tacos

Pretty good but not quite what I was looking for (on the search for the perfect lime chicken recipe). I will definitely try again as I was unable to get cilantro or green onion at the local vege market. I did marinate the meat in the sauce (doubled the sauce) for a couple of hours before cooking which I think helped. I also used LOTS of lime.

Sour Cream Chicken and Stuffing

Pretty good. A couple of changes: I boiled the chicken for 20mins first and cut it up into bite-sized pieces and put in the bottom of the pan. I also mixed 1 1/2 cups of the broth from the chicken into the stuffing mix. This helped keep the cooking time down to 30-45mins. I also added black pepper and chilli powder to the soup mix instead of curry powder.
