Addictive Pumpkin Muffins

Delicious! I left out 1 cup of sugar (for a total of 3 cups) to make them slightly healthier, and didn't miss it. Also left out the raisins (I'm the only one in my family who likes them, sadly!). They are great, will definitely make again.

Double Chocolate Chunk Cookies

Wonderful! I added about 1/2 cup extra flour due to my high elevation, and they are perfect--they look lovely, taste wonderful, and have such a great, rich chocolate flavor. Will definitely make again!

Greek Chicken Pasta

This seems like a good start to a recipe, but I found it a bit bland and dry. It could really use a sauce, and I discovered I'm not a big fan of artichoke hearts ;-) It came out all right, but I don't think I'll make this again.

Roasted New Red Potatoes

Oat Applesauce Muffins

Very tasty! I was concerned that they'd taste too 'healthy,' but they actually have great flavor and a nice texture. I added 1 tsp. cinnamon, and only let the oats soak in the buttermilk while I mixed up the other ingredients and preheated the oven (maybe 15 minutes total soak?)--this probably kept more of that 'oaty' texture, which I like! I think 30 minutes for the bake time is a tad too long, though. They were a bit dry and hard on the bottoms at 30 minutes; I made a second time and baked 20 minutes which seemed to be perfect.
