I also used 1/2 cup mayo,1/2 cup milk(I only had 1%),crushed ritz crackers as I was out of bread crumbs and the same seasonings as the recipe states. ONLY, as I was adding the paprika, I realized I added HOT paprika by mistake. So, I removed as much of it as I could and added the regular paprika. Apparantly some of the hot stayed with the breading because you could taste a tiny bit of a kick with the chicken. It was incredibly moist and delicious. My extremely picky 5 year old ate every bit and I also enjoyed it.
