Mini Pineapple Upside-Down Cakes

Easy, moist and a nice change from a cupcake! I mis-read the recipe and thought it said reserve 1/4 cup pineapple juice. So, I panicked as I had already dumped the remainder of the juice down the drain. So, I gathered the pieces of pineapple I cut off, squeezed the juice out of them and actually dropped pieces of whole pineapple into the batter. THen I added about 1/2 cup water to make sure I had enough liquid. They came out fabulous!! So cute too!!

Rosemary Ranch Chicken Kabobs

YUM!!! Made exactly as written minus the rosemary as we are not rosemary fans. THis was the moistest, well seasoned chicken I have ever had. I made one day as kabobs and the next with pounded chicken breasts. No leftovers.....

Gourmet Chicken Pizza

Tasty and easy! I added a bit more cheese and 1 extra chicken breast. I sauteed my chicken in a little olive oil, salt, pepper and garlic. I used Pillsbury pizza dough. Will def make again.

Wow! These were extremely easy and quick to make. My only change was substituting cinnamon applesauce for the margarine. And, I only needed to bake for 12 min.

Braised Balsamic Chicken

So quick, easy and good. I added mushrooms and minced garlic rather than garlic salt. My husband said he would order this in a restaurant. Very healthy too! Served with sugar snap peas and crusty bread to mop up all the juice.

Asian-Style Pork Chop Bake

This sauce was incredible. I will definitely use this on chicken or fish as well....I didn't use the sherry and I broiled the chops. I had the real thin chops. Everyone in the family enjoyed this!

Sweet, Sticky and Spicy Chicken

great flavor...I had the same problem with the sauce sticking. I even dredged the chicken in flour prior to browning. After my chicken was cooked, I took it out of the pan and then thickened up my sauce with a little bit of cornstarch. I then returned the chicken into the thickened sauce. I will definitely try again.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

This was just the right mix of spicy and sweet. The pork loin was soooo tender and juicy. I marinated the loin for approx 5 hours with the dry rub. Rave reviews from the entire family!! I agree there was a lot of extra glaze but I'll save it and use it on chicken or salmon.

Cheese Ring

I also use chopped pecans in the mixture. And, I have always used strawberry preserves and Breton crackers. Every time I make this I am asked for the recipe. It is always a hit. Love it!!

Crunchy Romaine Toss

This was very good! I made it as the recipe stated but used olive oil instead of vegetable. I was hesitant about the amount of sugar, but it did not have a gritty taste to it which I was afraid of. I made my dressing a few hours ahead of time and then every now and again I would give it a good stir.I made it for my bookclub meeting and it was the first thing gone. I will definitely make again. The noodles were a nice, unusual addition.

Oven Fried Chicken III

I also used 1/2 cup mayo,1/2 cup milk(I only had 1%),crushed ritz crackers as I was out of bread crumbs and the same seasonings as the recipe states. ONLY, as I was adding the paprika, I realized I added HOT paprika by mistake. So, I removed as much of it as I could and added the regular paprika. Apparantly some of the hot stayed with the breading because you could taste a tiny bit of a kick with the chicken. It was incredibly moist and delicious. My extremely picky 5 year old ate every bit and I also enjoyed it.

Bailey's Banana Colada

Wow! Loved this drink. My husband and I have been wanting to duplicate this recipe since we were on a cruise 8 years ago! I made this for myself, so I cut the recipe in half, then took another reviewer's advise and used frozen pina colada mix (3oz), one banana, 3 oz bailey's, 1 1/2 oz cream of coconut, ice and an ounce or two of pineapple juice. Very good. Thanks for bringing back awesome memories!

Pumpkin Pie Bread

Great, moist bread. I made this bread this afternoon and one loaf is gone. Forget about waiting one day for best flavor! No chance of that in my house. My girlfriend stopped over, tasted the bread and immediately asked for the recipe. Will definitely make again. So nice because I had all the ingredients on hand. Great fall treat!!
