Pasta e Fagioli II

I had pasta e fagioli at the Salt Lake City airport in August. It was so outstanding. I e-mailed the restaurant for the recipe to no avail. I tried this recipe and it is close to the delicious soup in Utah. I used half white beans and half red. A definate keeper!

Sauteed Portobellos and Spinach

I used finely shredded swiss cheese since my husband does not like Parm. I ommited the basil and added more garlic. Super dish. I served it along with roast beef, carrots, potatoes and onions. Sourdough bread and dinner was ready. Thanks.

Fabulous Fried Cabbage

Funny thing! I had fried up bacon for breakfast this morning. I still have the drippings and four slices of bacon left. I had purchased packaged cole slaw mix, but did not want to make the homemade dressing. I will prepare this recipe tonight to serve with the ham I baked last night. I will let you know how we liked it. We love wilted greens anyway. Thanks. Freddy3

Yummy Bok Choy Salad

Another winner! I have used Bok Choy various ways from oriental soup to Kimchee that I can in mason jars. This recipe I used ramen noodles in the basic salad and topped it off with chow mein noodles to avoid soggy salad. Love it.

Spinach Salad with Warm Bacon-Mustard Dressing

Great salad. I had purchased baby spinach and had hard-cooked eggs in the fridge. I had Provolone slices on hand so I cut it thin slices, used slivered almonds, mandarin oranges and canned sliced mushrooms since I did not have fresh. The hot dressing was the clue to a great wilted salad. It was filling for me and a side dish for my hubby. Loved it. Thanks.

Spinach Salad with Oranges

I was a bit leary about ketchup in the dressing, but went with it anyway and glad I did. I will try it out on my grandson when he flies in Miami for a visit. I used Red wine vinegar.

Tantalizingly Tangy Meatloaf

I did not like meatloaf growing up so I only made it for my husband once or twice a year, trying all new recipes. This is a terrific recipe. I too used Ritz crackers instead of boring bread crumbs.I mixed apricot and pineapple preserves together, reduced the brown sugar and added some spicy mustard to the beef mix. Outstanding flavors. I am going to copy this recipe for a daughter-in-law who is crazy about meatloaf.

Strawberry Spinach Salad

First of all I like the simplicity of ingredients and recipe. I tossed in some toasted slivered almonds and used freshly cooked bacon pieces. The Raspberry vinegrete was the crowning ingredient. Will definately make it again and again.

Frog Eye Salad

I did make this for the Graduation party and said I would rate/review again with what the guests had to say. Outstanding, and luckily I had printed several copies of the recipes for everyone who asked. I gave out around 60 recipes for this delicious salad. thanks. I did use mini marshmellows and I think that is what sold skeptics into trying it.

Yakisoba Chicken

OMG! this was my first attempt at making Yakisoba anything. It was fantastic. I used Sambal Oelek, ground chili paste made by Huy Fong Foods as recommended by Tim's Oriental Market. Clear bottle, green top and rooster on label. I used packaged cole slaw mix, chicken tenders, fresh mushrooms, bean sprouts and snow peas which meant to double the sauce. Ramen noodles are a staple in my kitchen so I used them up instead of buying soba. Hubby gobbled it up and wants to me make it at least once a month. Next time I will use shrimp. Thanks for a keeper.

Vinegar Pickled Carrots

I have used this type of recipe with some variations. I add cauliflower, red pepper strips,red onion, celery and toss in some black peppercorns along with the carrots. It is more economical to do this than to purchase Giardiniera. I use dishwasher cleaned pickle bottles, etc. Always a hit on a relish tray for a covered dish affair.

Peach Curry Glazed Pork Chops

So good! I substituted apricot jam since I had it on hand. Wonderful sauce and will try other ideas to add sauce to cooked egg noodles.I think maybe small pork meatballs would be good swimming in this sauce for a party idea.

Tortellini Bites

I used spinach-cheese tortellini. I used only the broth, added canned navy beans, onions and chopped sauted garlic. I served this as a main meal soup at a gathering and it was a hit!

Broiled Tilapia Parmesan

A friend gave me a copy of this recipe. I told her I am an allrecipes subscriber so I would try it. I am a big fish lover. I made it last evening and was pleased with the tasty, moist results. hubby does not like parmesan, but did enjoy the sauce after all. I served it with buttered, parslied egg noodles, corn bread and steamed sugar snap peas. a deniate keeper! Oh yes, I did buy some fresh Old Bay seasoning and used a bit of Lawry's seasoned salt and garlic powder. 2 die for.

Bacon Wrapped Smokies

I made the Tiger Dill Sauce submitted by Echomoon. It was great served with these tasty little Smokies. I used pineapple tidbits in each Smokie and bacon roll up. It added an extra kick. Friends ask for these each gathering. Keep the good appetisers coming!
