Spanish Rice II

Excellent rice, though we had to change the recipe up a little bit because in the work kitchen we don't have anything. Omitted the salt, boiled chicken (tore it up, tossed it in after everything was done) and use the broth instead of water, didn't use chili powder (none here), used a can of Stewed Tomatoes with Oregano etc, and used butter instead of oil. Delicious.

Baked Ziti I

Wow, just wow. Everyone absolutely loved this, even though I messed up! Always make sure that you use the right sized pan! Otherwise, messes are made while having it overflow (it stayed pretty much in the pan though). I added some crushed red pepper and cayenne as well to the sauce because we like a little kick.

Chicken Parmigiana

Made this last night, and my father loved it! I didn't care for the taste, but that's personal preference. However, it was still good and perfectly moist. He's forcing me to make it again for him some time, and normally he hates when you introduce new dinners to his tiny catalogue of meals.

Skin-on Savory Mashed Potatoes

Made these last night for dinner, and they were EXTREMELY good. The rest of the family didn't realize the skin (which they normally whine about.) I didn't even need to add pepper it was that good.

It was awesome. I, of course, added more of the spices, some pepper, and some butter. Loved it. Add the butter, it makes it so much better.

Homestyle Potato Chips

Im sorry, but I have to say that my family didn't even get to try these. As fast as I was making them, I was eating them. The only problem that I came across with the recipie is my inability to slice anything paperthin. I did two half batches. One that followed the recipe, and the other one where instead of soaking the potatoes in water I soaked them in vinegar. Both turned out great. I only soaked the potatoes in vinegar for probably ten minutes max, as I felt too long may take away from the original taste. Thanks for the great recipe. I'm going to keep this on hand, and next time when I make them I will most definately make the batch a lot bigger.
