Easy Rosemary Chicken

My husband loves rosemary, so I thought I'd give this a try. We only had fat-free soup, and dried rosemary, so I doubled the amount of rosemary, added some garlic and herb flavoring, and the 1/4 c. of milk recommended by others - and it came out great. It looked a little funny - I'd cooked it covered to keep the chicken moist, so next time I'll let it brown a bit at the end, but my husband ate two pieces and suggested that I give this recipe the highst rating possible, so I think he really liked it. I'll definitely make this one again. And it's SOOOO easy!

Peanut Butter Kiss Cookies

Any cookie is good in my book, of course, but I think I like these better as plain peanut butter cookies than I do with the chocolate added. I should add, though, that my husband disagrees with me! LOL

Super Easy Salmon Cakes

My husband really liked these - he's a big fan of salmon cakes and I've never had a recipe to make them. I'll make them again, but next time I'm going to cut back on the crackers added to the salmon, because I feel they were a bit too dry. Other than that, a really good meal.

Embarrassingly Easy Barbecue Chicken

This recipe turned out surprisingly well. The sauce is not exactly a BBQ type, it's more of a tomatoey type of taste, but it's pretty good nevertheless. My husband absolutely loved it. I was a little less enthusiastic, but I still found it to be worthwhile - and definitely an easy meal to make. Will serve it again.

Pineapple Chicken

This recipe got full marks from both myself and my husband. (He ate 4 pieces!) I used skinless, boneless thighs and added the full amount of water called for, PLUS all the pineapple juice, and TWO full packets of onion soup mix, rather than 1 1/2, because we like a stronger flavor. It was great. As my husband pointed out, it tasted vaguely oriental - kind of dark and sweet, but not very sweet. This one is an instant family favorite!

Husband's Delight

First recipe here I've really liked. I used some of the suggestions and browned the beef with the onion. Added green onions to the sour cream mixture. I did layer noodles on top, and they did begin to dry out a bit, so I covered the pan with tin foil and they softened right up again. After cooking, I poured a tomato-pesto sauce over the top for extra flavor, and it was perfect. Will definitely make again! (I should also add that I used reduced fat cream cheese and reduced fat sour cream to cut calories and make fat.)

Quick Polynesian Chicken

Once again, this recipe shows how two people can have vastly different tastes. My husband liked it. He said that this recipe made him realize that he likes sweet chicken recipes, even though he dislikes sweet beef recipes. This dish wasn't to my taste, however. I felt it was very bland, and couldn't really taste the fruit at all - of course, that might've just been me, I suppose.

Easy Cheesy Chicken II

It's OK - good but not great, according to my husband. He says he'd like it again, but didn't have seconds. I used Cheeseits for the crackers, which my husband said kept it from being too bland, and I put a little chicken seasoning/pepper on the chicken before baking and covered it during baking. Chicken was very tender and juicy, but looked odd at first, so I put it back in the oven for 5 min to brown - then it looked better. Paired it up with pasta topped with tomatoey sauce, it worked.
