Bean Soup With Kale

I changed this recipe by using yellow plum tomatoes. I also used red leaf lettuce in place of kale. I added a few chopped radishes and some snap peas about 5 minutes before finishing. After tasting I added some cayenne pepper and it blended well.

Shrimp Linguine

This was a really good recipe, and it was not too difficult. I just used the tiny salad shrimp and that made it pretty cost effective. My husband said he would like if I made it again, and he does not usually like cream sauce.

Chicken Parmesan

This was well worth the effort! My husband loved it and said it was as good as any chicken parmesan he's had in any restaurant. I did not have the fresh basil on hand; but I used a basil marinara sauce and just sprinkled the top of each breast with a good amount of dried basil before putting it in the oven and I don't think it was missing anything.

Uncooked Banana Pudding

This was really great tasting for the amount of time it took! Not too sweet and quite light and fluffy. The only reason I did not give it 5 stars is because I am not a huge fan of Nilla wafers- this might be worth trying with a different 'bread' component.

This was SO delicious and flavorful! I just made a few small changes: Italian 5 cheese blend instead of just parmesan, I added 1/3 c. of chopped scallions, and reduced the garlic by one clove. Next time I will try spreading 2 T. of dijon mustard on the crust at the bottom.
