Hard-Boiled Egg Casserole
Made this the weekend after Easter, so had the bits & pieces leftovers from the ham...put about a cup finely chopped ham in the white sauce. I think you could cut the flour back by 1/2, does get really thick even with thinning prior to putting the oven. Served on toasted english muffins with a tiny sprinkle of paprika on top, very good and filling.

Ellen's Chicken Cacciatore
This was great!!!! it's really a 4.5 star!!!! I did cut back on the rosemary to 2.5 teaspoons and added a can of tomato paste. I also cut up the thighs in to small pieces sure it boosted the flavor level. Served on top of egg noodles with butter biscuits, Cant wait to try the leftovers, I bet it will be better the 2nd. time around.

Parmesan Roasted Acorn Squash
I flipped at about 10 minutes ans added a little more cheese herb mixture to the tops and finished them off. Next time I will peel the acorn before baking, we found that skin took away from the overall taste of the baked squash.
