Curried Coconut Chicken

I had to remove the diced tomatoes as it was too much. It was edible, but definitely not a great recipe.

Waffles I

Separating the eggs is a must. I also added cinnamon as suggested by others. Yummy. I didn't have milk, but I had buttermilk. I prefer butter to veg oil so I substituted. I had to cook them a bit longer as they were a little soggy. Next time adding another egg will probably help as the batter was a bit thick, which is probably why it took longer to cook them to perfection. But the flavour was well worth it. I also add 4 tablespoons of sugar since my little one doesn't like maple syrup, but likes them sweet. These are NOT diet friendly. A once in a while treat for sure. Wear your maternity pants because you will want to indulge.

Colombian Lentils

This is just how I've learned to prepare it. I learned it from my grandmother when I was a small child. I also add garlic and green peppers and celery and mushrooms all finely chopped along with a touch of turmeric. I cook ground beef and add it as well, or whatever meat I have to make it more like a stew. Brings me back to my grandmothers kitchen.

Barbie's Tuna Salad

My finicky 8 year old with very sophisticated taste buds gave it a thumbs up and asked me what I put in it to make it so yummy. The only modification I made was use fresh onion diced very small and fresh parsley and garlic. I will make a scoop salad with the remainder for dinner tonight.

Rosemary Ranch Chicken Kabobs

I made my own ranch dressing and followed the recipe letting it marinade for 1/2 hour. I made too many kabobs...we gobbled them all up. Even my finicky eater ate 2! We had it with a Caesar salad. First time making kabobs for me.

Tilapia with Creamy Sauce

I didn't read the reviews and it was too much lemon for the sauce. We love lemon but it was too much. Otherwise it was great and easy and a quick meal on a busy night.

Lentil Soup

I also doubled the spices, used the whole can of crushed tomatoes and added spicy sausage slices and chicken broth in place of plain water. My whole family ate it all up. They all had seconds!

Rajma (Kidney Bean Curry)

I loved the aromas. however, My family did not enjoy it. I think it asked for too much turmeric and maybe cloves, these are both in the garam masala anyway. My husband is Indian and he didn't think it had enough flavour. I do think its because the turmeric over powered everything. I will try it but use the garam masala only.

Chicken Makhani (Indian Butter Chicken)

My husband is from India and I am from Colombia. This is my first time making this dish for him and he loved it. It also got the stamp of approval from my eldest daughter who loves indian food. I did not use any hot peppers however, because of my youngest child. It was still very tasty. My mother-in-law will be proud of me.
