Mocha Icing

I saw that a few people said they did not like this icing because it was not of spreading consistency, and was more like a glaze. I followed the measurements exactly and chilled it in the fridge for 1 hour. It was the perfect spreading consistency!

Easy Butternut Squash Ravioli

What a wonderful recipe this was! However, I made a few alterations. This was my first time buying (and cooking) butternut squash. I replaced the ravioli noodles with spaghetti noodles, and I replaced the Parmesan cheese with shredded marble cheese. I also increased the amount of cayenne pepper because I prefer it to be a little bit spicy. This dish had the perfect amount of sweet and salty flavour. My husband and I both enjoyed it!

Baked Tofu Bites

Generally, I use tofu in rice and/or noodle stir fry, but wanted to try something different last night and found this recipe. It was delicious! Very flavourful, and I served it on a side of pasta and Caesar salad. The only variations I made to it were: I didn't use sesame seeds because I didn't have any. I didn't have any liquid smoke flavour, but instead I used lapsang souchong tea, which is a specialty tea with a very smokey flavour! My husband also enjoyed this dish. Light, healthy and tasty.

Red Velvet Cake

I have been searching for an authentic red velvet cake recipe for the longest time, and this one is the closest I've found. The cake came out SO moist, and I used one of the reviewer's suggestion to mix the baking soda and vinegar right at the end, and put it in the oven ASAP. It worked like a charm. The cake came out soft, delicious and melted in my mouth. The only alteration I made was, I used a cream cheese frosting instead of the one provided. It tastes amazing. Red velvet is my favourite kind of cake!
