Super-Delicious Zuppa Toscana
I have tried the soup and its a good recipe, I do mine a little different and have good reviews when I serve it, small children can enjoy it also as I don't use red pepper flakes.Instead of ground sausage I use Johnsonville mild Italian sausage links, Olive Garden uses this also, for the two of us I use three links. With a point of a sharp knife I poke about three holes in each link. Put them in a Dutch Oven with about an inch of water. Bring to a boil and reduce heat. Cover and let simmer until water is gone and sausages are done. Remove. Let cool and slice on the diagonal about 1/4 to 1/2 inch wide.Cook bacon, onion and garlic in same pan with a little oil until crispy and remove and drain on paper towel. Peel and cut potatoes, I use about 2 large for the two of us, into quarters. Bring water and potatoes to a boil, cook until done and add prior ingredients. Add broth or water with bouillion and cook until hot. Add 3 to 4 Cups Kale and cream. Simmer about 4 minutes and serve with croutons on top.
Sausages may be cooked in the oven on a cookie sheet at 300 degrees until done, drain, cool and slice.
