Taco Seasoning I

Put 1/2 small chopped onion & 2 cloves minced garlic; omitted salt; used all spices. Added tomato puree to desired thickness. A low salt alternative that ist very tasty & just what I was looking for!

Healthier Apple Crisp II

Smells delicious, like apple pie! Made 2 pans for healthy potlucks @ husband's & my work. Used 10 large honeycrisp apples, 5. lbs, from local farmer, for each 9 x 13 recipe. It will fill the pan (with a rounded top like a cake), so press the topping on with a large spoon and put the pan on a foil-lined cookie sheet. Followed others' suggestions & added some of my own. Use apple corer/peeler, all brown sugar, all whole wheat fllour, old fashioned oats, 2 tsp. cinnamon, 1 tsp. cloves, & 1/2 tsp. nutmeg. Stir 2 tsp. vanilla extract into melted butter. Wondered whether initial sugar/flour/water mixture would blend in better if it were stirred into apples rather than sprinkled on top. Next time (and there definitely will be a next time!) I would either omit water or add cornstarch or tapioca to water, since it was rather watery. Apples did not get mushy. Tasted great & husband's co-workers ate the entire pan! We were very busy & only had time for 1/2 a pan! It's a keeper!

Chocolate Truffle Pie

Made for husband's birthday cake. Very easy recipe. We prefer less sweet taste and this had a dense, fudge texture like that of a rich, flourless cake. Using ingredients I had in house, I halved everything except the sweetener, using 4 oz. of unsweetened Baker's chocolate and 1/2 c pure maple syrup. Put the bowl and beaters in the freezer and add 2 TBS vanilla to 1 pt real heavy whipping cream. Bake in 5 x 9 loaf pan. Serve on fancy elongated serving plate.

Stupid Simple Roast Chicken

Rinse & let drain upright in fridge. Spread olive oil on skin, then coat with Kosher salt. Nice and crispy on the outside, juicy on the inside, and very easy to make!

Chicken Enchiladas with Creamy Green Chile Sauce

Fried corn tortillas and layered them. Used Mexican Blend Cheese. Kept chopped cilantro separate to sprinkle on top, since not all family members like it. Husband and I enjoyed this recipe and would definitely make it again!

Asparagus Pie

Nice, light texture and people at Easter church breakfast liked the hint of lemon. Buy medium-sized asparagus and include the tops. Use finely grated zest of 1 lemon & scant 1/2 tsp. ground thyme per 8" x 8 " recipe. Due to dairy allergy, made a non-dairy version by sub. unsweetened original almond milk for milk and olive oil for butter.

Pear and Almond French Toast Casserole

Delicious, easy brunch or dessert that was loved by everyone at church, home, and work. Has a bread pudding consistency but is not overly sweet. Made the following changes, as others suggested: double the pears (sliced in juice), 10 lg. eggs, 1-1/2 lb. loaves French bread, 2 c. milk (or almond milk and vegan butter), increase almond extract to 1 tsp. if you prefer stronger almond flavor, put generous 4 oz. pkg. sliced almonds on top before baking. 10 x 14 pan - 24 servings.

Sam's Famous Carrot Cake

Perfect as is: great combo of flavors & texture & not overly sweet! Made for my daughter's 27th birthday, since carrot cake is her favorite. Brought to church for fellowship time, and it was devoured within minutes, with people asking for the recipe and coming back for seconds! Only change I made was adding 1/4 tsp. each nutmeg & cloves. Took note of others' suggestions: make a day ahead for flavors to mingle; sub milk + 1 tsp. lemon juice or vinegar if don't have buttermilk; use food processor or lg. cheese grater for carrots, which should be packed in measuring cup tightly; best with Cream Cheese II frosting by Janni. I doubled cake recipe, using 3 - 9 x 13 pans - glass @ 45 min., used 1 frosting recipe, and decorated with chopped walnuts. (Probably 1 recipe would fit in one pan next time, but 1/2 frosting recipe is plenty for each batch). Definitely a keeper! Thanks, Brian & Grandpa Sam!

Garbanzo Stir-Fry

Delicious! Tailor ingredients to your preferences. I omitted oregano & cilantro, increased garlic to 4 cloves, and served with instant brown rice & Romano cheese. Very healthy, since rice and legumes like garbanzo beans make a complete protein. My teenager liked it in a soft tortilla with mozzarella cheese. If you steam the zucchini in a large frying pan with a cover til crunchy, you don't need to use a lot of olive oil. Took a sample to work and everyone wanted the recipe.

Chocolate Zucchini Bread II

Excellent as is! Family, co-workers, neighbors, and college students devoured it. Cinnamon sounds like a lot, but was just right. Using mini-chocolate chips, can be baked for 45 min. in five small loaf pans, frozen in quart sized freezer bags. Tastes great slightly warmed in microwave.
