About this Cook
I am a stay at home mom of three beautiful kids, ages 14, 12, and 5. I have been married to my wonderful husband for almost 6 years, and we love our little family. I am the only cook in my home, but I like it that way. I enjoy the outdoors, music, theater, and reading. I have had a passion for cooking for several years now, and am willing to try almost anything and most of my recipes are just thrown together. I like to invent my own dinners, and as of yet, have not had a single complaint from my family.
My favorite things to cook
Anything with pasta, I love, love, love pasta. I enjoy grilling when I can, but baking foods is my new thing. My husband and I are trying to slim down and have a healthier lifestyle, so baking dinners are my new favorite.
My cooking tragedies
When I was 12 I baked some sugar cookies, and instead of 1/2 tsp. of salt I added 1/2 cup and they were AWFUL!!!

Wilted Spinach and Almond Salad
Another amazing recipe. A little tart, but amazing. My son (14) hates salads, but loves cooked spinach and even he enjoyed this. I think the only change I would make is to add a little more honey to take down the kick of the red wine vinegar.

Pasta with Scallops, Zucchini, and Tomatoes
This recipe was amazing. My children even loved it. However, the only thing I may change in the future is the amount of red pepper flakes. My husband, my son and myself thought the amount was fine, but my daughter thought it was too spicy. So I may add a lil less next time. Otherwise, I am absolutely in love with this recipe.
