I did a few things different, as others have stated I mixed the wet ingredients first then sifted in the flour. My son is allergic to dairy so I did some substitutions. I used almond milk in place of the regular milk, butter flavoring in place of the butter but half of the amount(can be found in with the specialty cake decorating) and zero calorie Sprite in place of the water (this added a little lime to the batter). I also used cooking spray instead of oil in my pan. We added chopped strawberries with a little bit of sugar on them that had been slightly mashed to the top. For those of use who were not allergic to the dairy I made a whip cream/cream cheese filling which is 8 oz cream cheese mixed until smooth first, one small container of whip cream, 1/3 c of sugar and 1 t vanilla, mixed until smooth. 30 very happy breakfast eaters.
