Cranberry Sauce

I concur with other reviewers: use half white sugar and half brown sugar. It was a little runny, so I now use extra pulp orange juice and cook it for about 5 extra minutes, and now it's perfect. Best to make it the day of or the day before, because the longer it sits it starts to lose some of the cranberry tang and gets sweeter.

Chef John's Pumpkin Pie

My father prefers a denser, more custardy pie, so this was excellent. Very smooth, no cracks, great flavor. Wasn't able to find chinese 5 spice, so I used cloves, fennel, and a dash of cayenne pepper (the little tingle from the pepper was amazing. I experimented on the guys at work and they LOVED it). On the next go around I might add a little more nutmeg, but it's very good as is.

Make Ahead Pie Crusts

Mediocre. The taste is about on par with store bought frozen crusts. I originally liked that it had fewer ingredients than my grandmother's recipe, but the amount of work to prepare was the same and the result was nowhere near. For some reason, my crust also burned way too easily even when using tin foil. Final verdict: either buy pillsbury or use a traditional crust recipe (same amount of work).

Whipped Cream

Really great consistency. Tip about ice cold bowl and whisk is DEFINITELY to be followed. Perfect amount of vanilla, but next time I make it I'll probably increase the sugar. I don't want it coolwhip sweet, but maybe another half tablespoon would give it the right quality.

Chicken Liver Pate

This is the first time I've tried liver. Since the other reviews are so positive, I assume that I must just hate liver because that was the most disgusting thing I've ever put in my mouth. But I'm glad that it must have been a good recipe so I know it was the liver itself.
