Buttery Soft Pretzels

Absolutely delicious! I made these two days in a row because they were gone so fast. The second time I made about 20 pretzels out of the dough instead of the dozen the recipe says. My German roommate says they taste exactly like the ones he grew up eating. Definitely a success!!!

Spinach Cheese Manicotti

Just made this for my roommates and it was a hit! Tasty and very filling. I followed the other suggestions to sautee the onion and minced garlic before adding to the mix, and to use a plastic bag to pipe the mixture into the pasta tubes. So much easier that way! This is definitely a repeat meal.

Lentil Soup

Love it! As suggested, I added 2 extra carrots and more spices. I also tossed in an extra celery stick, a couple dashes of cayenne pepper and about a teaspoon of chilli powder. I wound up using 2/3 cup green lentils because that was all I had the remaining 1 1/3 cups red lentils. It came delicious and I actually prefer the texture of the red lentils to the green. The chilli/cayenne pepper definitely gives it a subtle kick, but is still far from being spicy. I'd never made soup before and although it's not difficult, I'm quite proud that I was able to pull off such a delicious concoction!

Grandma's Gingersnaps

Delicious! I added a teaspoon of cardamon to the recipe as I'd seen in the comments and I baked them nearly twice as long as the directions suggests to have a crunchier cookie and still a somewhat chewy middle. Perfect with a cup of tea!

Apple Bread

DELICIOUS! It's even better on the second day once the flavours have settled. I covered my pan with a tea towel and then a plastic bag to keep the moisture in and it made for a wonderfully moist loaf that lasted for a few days. I also made the adjustments to the recipe of half white sugar-half brown sugar and adding vanilla extract. In the halved recipe, I used 1c whole wheat flour, 1/2c white flour, and I also added 3/4c oats for texture. The oats definitely made it a filling breakfast with a side of tea. Next time, I will replace the oil with apple sauce for a healthier mix.

Zesty Quinoa Salad

Loved it! I couldn't find any black beans here in Australia so I had to settle for kidney beans. Still good, though! The cumin and lemon dressing combined with the cilantro was a delicious flavour. I also added cucumber as I had seen in another comment. Great idea!

Strawberry Lemon Muffins

These were quite tasty, more tang than sweet which was nice to have with a cup of tea. They are best warm on day one as they got sticky and a bit mushy the days following. If I bake them again, I would fill the cups more than I usually do because they came out small, and I would add a bit of sugar on top before baking. Alternative my roommate suggested to topping with white sugar: top with a dusting of icing sugar once out of the oven.

Carrot Cake III

Made this cake for my housemates and everyone loved it! Perfectly moist and not too sweet. Due to a lack of certain ingredients, I made just the basic cake, no pecans and no icing, but it was deliciously simple. Next time, I will go for the simple cake again, but with a side of ice cream or vanilla yogourt.
