Fajita Marinade I

I marinated onions, bell peppers, and cilantro leaves in this, and they were DELICIOUS once skillet-roasted. I didn't use any liquid smoke (none on hand), and while my veggies might be even better with the smokey flavor, they didn't seem to need it.

Mexican Bean Salad

I'd give this 5 stars, but I played with ingredient ratios based on what I had on hand, so it seems dishonest to rate so highly a recipe that I changed. I used more lime juice and no vinegar, halved the sugar and salt, omitted corn (since I had none on hand), used pinto instead of black beans (having none of those on hand either), and substituted cayenne powder for hot sauce. I definitely recommend using cayenne. This was even better the 2nd day, once the flavors had melded more, and I'm sure it'd be even better on the 3rd, but it didn't last that long. ;]

Quinoa and Black Beans

My family loved it. It's very tasty, if not terribly interesting, and the inclusion of the cayenne definitely makes the dish. I, too, added only one can of black beans, and that seemed to be just the right amount. I also didn't use cilantro (having none on hand--this is an excellent "Augh, I have no fresh veggies" emergency dish), and it didn't seem to need it. ETA: also, this made more like 5 servings (as a main dish) than 10.

Orange Vinaigrette

I made this with clementines (since I didn't have oranges on hand) and it was DELICIOUS. I definitely recommend use fresh-squeezed juice over bottled juice--the flavors are more complex. I used it on a clementine/roasted asparagus/cashew salad and it was WONDERFUL. The olive oil I'd roasted the asparagus in helped the dressing stick to the salad.

Quick and Easy Pizza Crust

I like the density and texture of the crust (but I did use whole wheat flour). I used it for a Hummus Pizza (poodlemoluc's recipe on this site), and it was delicious.

Hummus Pizza

I love the concept. It was delicious, but I made some changes. I made my own hummus and added some garlic for flavor. I also cut back on the cheese so that it wouldn't overwhelm the other flavors and added some onion (because I really love onion.) Would definitely recommend and make again.
