Award Winning Soft Chocolate Chip Cookies

Before making this recipe, I read several reviews. The ones that were negative, I thought initially, couldn't be right because all the others seemed so glowing. Well...not so fast. I am not new to cooking and usually don't have any problem with recipes. I followed this one exactly - even using a flat edge to 'level off' the dry ingredients. I let the butter warm up to room temp. I creamed the butter with said ingredients. Yet, still these cookies were not "soft". While they weren't rock hard like other recipes I've made, these were not chewy or soft. Sure, they tasted very good, but so did the standard Tollhouse recipe, which is simple to follow. Bottom line for me: I gave the cookies 3 out of 5 stars because they tasted good, but took off the 2 stars because they weren't soft. I'm still looking for a Soft Chocolate Chip Cookie recipe. This one, wasn't it. I would caution folks to make a half batch BEFORE delving into the 6 dozen!! If it works, great! If not, do you really want to be stuck with 6 dozen cookies that you don't like???

Shepherd's Pie VI

My family loved this recipe. I did add peas and sliced carrots. I also used Ore Ida frozen mashed potatoes to cut down cooking time. You throw them in the microwave and 10 minutes later you have potatoes to mash. Time saver. Also, I added a bit of mustard, worcestershire sauce, and a bit of garlic powder to enhance the taste of the meat. It turnd out really yummy. Very simple and fast.

Quick and Super Easy Chicken and Dumplings

One reviewer said it best - it's similar to Cracker Barrels version of Chicken and Dumplings. I happen to love that recipe and this one was just as good. I made a few changes. I added carrots and onions. Instead of canned chicken, I used boneless thighs and boiled them first. This made the broth more flavorful, plus, I think boneless chicken tastes better than the canned version. We served ours over mashed potatoes. It filled up my 15 year old and that is nearly impossible some days!
