Colleen's Potato Crescent Rolls

Delicious! 4 stars only because I made alterations, the result of which were 5 star rolls. I made this with half shortening/half butter and cut the sugar in half. I also did not refrigerate it... just let the dough rise covered on the counter, then let the crescents rise again in the oven at the lowest temp setting. Brushed them with butter before baking, into the oven for 25 minutes and they were just perfect. My hubby loves them. I froze half of my rolls before they rose the second time so we can enjoy some more in a couple of weeks! I think cutting the sugar in half is a good choice if you are making a dinner roll as I can still taste a bit of sweetness. However, this would be fantastic as cinnamon buns or another sweet bread with the full amount of sugar in the dough.

To Die For Blueberry Muffins

I made these last week for a co-worker... and obviously had to try one before giving them to her! They were so good that I had to make another batch tonight for my husband and I. I'm not giving them 5 stars because I do think there's a little something "missing" from them. That something for me is lemon zest, which I realized half way through filling my muffin cups on this second batch. I added some to the remaining batter and, while the plain ones are great, the lemon ones are incredible. I haven't made them with the topping and I think these muffins have enough going for them without it. However, for an extra special treat I imagine adding a bit of cinnamon to the batter (no lemon, of course) along with using the topping would be divine.
