Caramel Banana Tiramisu

No Bake Pumpkin Pie I

My family was very skeptical about this pie, but it was a HUGE hit and was eaten faster than the traditional pie I made. I made a gingersnap crust for it instead of graham cracker, which was perfect. I'm definitely planning to make it again this year.

Carrot Cake

This is an excellent carrot cake! Dense, moist, and flavorful. Hubby raved about it 'til the end. I reduced the oil by 1/2 a cup, added 1/2 cup of natural applesauce, and omitted the walnuts, as neither of us like them. I used my Ninja to make the carrot really small (personal preference) instead of just grating. I opted to cook in a 9x13 pan at 340 for an hour. Next time I might add more cinnamon, but that's mostly because I like cinnamon and also to play with recipes, lol. The frosting is another story. I made the recipe version and quickly realized I'd just made a yummy glaze (probably great on a bundt/tube cake), but not a frosting, so I started over with the Cream Cheese II Frosting (minus 1 cup sugar), which was much better, especially when storing the whole thing in the 'fridge, which is how we like carrot cake.

World's Best Lasagna

I found this to be kinda bland, not the WOW recipe I was looking for. Not horrible, but not "World's Best" either. The sauce everyone raved over tasted like the jar sauce I get from Aldi. I love that sauce, but it's JAR sauce, so I really expect more from something more labor intensive.

Easy French Dip Sandwiches

This is the easiest idea for a recipe ever, lol. I actually just buy a packet of Au Jus mix, prepare it as directed, plus a little rosemary, and then follow this recipe from there. Yummy & simple. Pre-toasting the rolls a bit is highly recommended.

Special Turkey Gravy

Chicken Chimichangas with Sour Cream Sauce

Definitely one of the best recipes I've tried here. My husband says it's a definite keeper. The best part is that both the meat and sauce reheat nicely (just be sure to leave some "juice" so the meat won't be dry), so it's a very easy leftover dish. Combines nicely with the Mexican Rice II recipe.

Southern Pulled Pork

My husband LOVES this recipe. He even takes the leftovers to work and brags about the great pulled pork I make. After cooking the pork, I drain out the water, shred, and add Sweet Baby Ray's Hickory & Brown Sugar (more mellow and sweet than the Original SBR) to taste, then let it look in the crock pot for another 1/2 hour. Delicious!

Lemon Cheesecake Squares

These are fabulous! I made them for a large backyard barbeque and they were definitely a hit. Generally I'm not a fan of bar cheesecake recipes, because they have a fluffy, from-a-box taste, with a boring, crumbly crust, but these taste just like they came from a mini springform pan. They also present beautifully. I will definitely be adding this to my list of favorites!

Tortilla Soup

We LOVED this soup! I made it with hand shredded turkey (Thanksgiving leftovers, in fact), added about 1/3 c of canned corn, and simmered for 10 minutes and 20 minutes, instead of 10 and 3-5. I skipped the cilantro and cheese for serving, and made the Tortilla Snack Strips (cut much smaller than called for) for topping. My fiance (an ex-chef) was amazed when I told him how simple this recipe was, as it tastes like something that takes much more work!

Homemade Chicken Parmigiana

My fiance loves the sauce for this recipe (I like it as well, but he LOVES it!), and with a tiny bit of tweaking, we both love the chicken portion. I make sure to pound the chicken down and reduce the cook time, plus I use a heavy-handed teaspoon of both basil and oregano in the crumb mixture. If I'm short on time, I skip the sauce portion and just make the chicken part and top with spaghetti sauce and a mixture of 1/4c mozz and 1 T packaged parmesan. Yum.

Chocolate Fudge Buttercream Frosting

I would never classify this as a buttercream frosting. It pretty much tasted like a sweeter version of frosting from a can. Much too sweet, and also much too runny. It would probably be OK on a sheet cake, but on a layer cake it literally ran down the sides a bit and pooled on the cake plate. Definitely will not be making again.

Best Big, Fat, Chewy Chocolate Chip Cookie

I have always stuck with the standard Toll House-style cookies, but longed to be able to make bakery-style dense, buttery cookies, and now I can! These cookies have gotten RAVE reviews from my fiance, his co-workers, and also my co-workers. I don't refrigerate the dough, and I did reduce the chips to 1½ cups as suggested, plus also increased the salt to 1 tsp to balance out the super sweetness of this recipe (plus we like salty cookies). Be sure to take them out of the oven before they look done and let them finish cooking on the cookie sheet. Every batch I've made is perfect at exactly 17 minutes. If you cook them until they are brown they will not have the buttery denseness, and they will get hard quickly. I've gotten extremely consistent results with this recipe - buttery, soft, dense cookies that are never crispy, fluffy, or cakey!

Cheesy Ranch New Red Potatoes

Love this recipe! I don't measure my ranch, just take the bottle and pour, and I also add bacon. Oscar Mayer makes bacon pieces you can buy and just sprinkle on, and they work great! Bacon bits, however, do not work as well.

Cafeteria Macaroni and Cheese

I LOVE the flavor of this dish (it's a very different flavor--if you're looking for a purely cheesey, velveta-ish mac, this isn't for you), but I can't quite get the texture right, otherwise I'd give it five stars. Mine comes out kinda grainy and a bit greasy (but still good!!!). I don't think I'm overcooking it, as suggested by previous reviewer. I'd welcome any suggestions on what I may be doing wrong. Maybe it's the milk I use...

Cream Cheese Tart Shells

Excellent! I used these to make miniature pumpkin pies. Very good flavor, but the flavor doesn't stand out so much that it interupts the flavor of the filling. Definitely a keeper.

Bev's Mac and Cheese

I initially prepared this recipe as shown, but with the tiny additions of some of my faves from another recipe, a few drops of worcestershire sauce, and a pinch of ground mustard. After the microwaving, the consistancy was very creamy, even a little runny. However, the taste was quite bland. Kinda reminded me of Stouffers, which I think is just kinda so-so. I ended up about doubling the sharp cheddar cheese. After this, the dish had better flavor, but a somewhat gritty texture that worsened as I ate and it cooled. An OK recipe, maybe better with some work.

Nany's White Cake

What a waste of frosting! This cake did not rise much, so I cut the layers in half and made a four-layer half cake. Looked great, tasted awful. Very heavy, with an eggy taste. I'll stick to Duncan Hines from now on.

Absolutely Best Brownies

My husband and I adore these brownies! I have never before made a recipe that I like as much as boxed mix, but I'll never make a box again. I used 1/4 cup stick margarine and 1/4 cup veg. oil instead of the 1/2 cup butter, plus I'm a little heavy-handed with the cocoa. I threw in some chocolate chips and took out the walnuts. We can never wait for them to cool before we *have* to dig in. Yummy!
