I have made other versions of this recipe, but found my family prefers this one. I have three small kids and finding something everyone will eat is pretty tough. They love the meat and the sauce over egg noodles.

Tex-Mex Pork

I make this dish regularly. I use half for dinner one night and freeze half for another dinner later in the month. Everyone in the family likes it, even the kids!

Ten Minute Enchilada Sauce

I loved this recipe. I liked that I could adjust the heat so my kids would like it as much as I do. I probably won't be buying canned sauce again, because this sauce tastes great, is easy, and has ingredients I always have on hand. I used real butter instead of oil, because I prefer the flavor. I also used all purpose flour and the recipe was a success.

Make-Ahead Potatoes

Best Spanish Rice

I have to admit this is the first and only rice dish I have made from scratch that actually tasted good! I cooked the rice in the oil for a couple of minutes with dried sliced onion, since I didn't have fresh onions on hand. I used a fire roasted tomato salsa and the dish was great! Fluffy, full of flavor and even my little ones ate it up!

Glazed Pork Chops

My entire family enjoyed this dish. I used thick cut boneless pork loin chops. I browned them in the pan, then added the sauce and simmered everything, with the lid on, for 25 minutes. I then removed the top and simmered 10 more minutes to thicken the sauce. (They were really thick chops!) For the first time in a while my husband didn't complain the pork was too dry!

Taco Seasoning I

Thank goodness for this recipe! My kids always complain that tacos made with the pre-made packets are too spicy (wimps!) I made this without the red pepper flakes, and they didn't complain! There is a first for everything!

Absolutely Ultimate Potato Soup

I lightened this recipe by using lean smoked sausage sliced thinly instead of bacon and fat free half and half instead of cream. I also used half the butter and thickened the dish with cornstarch at the end. I imagine the original is awesome, but I don't dare try it while I am trying to lose weight!
