Pancho Villa Baked Tilapia

My husband and I love this recipe and have it regularly. We didn't need to use the olive oil on the foil because of the juices from the spicy tomatoes. It is so light and easy to make.

Shrimp Enchiladas

Maybe I did something wrong, but the tortillas turned out gummy. I guess I was looking for more of an enchilada taste than what I got. Instead of the large shrimp, we used the smaller shrimp. It took a LONG time to cook! By the time they were done, we just mixed it all together and put it over rice. Maybe next time I'd try it with an enchilada sauce.

Sicilian Pizza

This was incredible! It was my first experience making my own crust. A bit of a challenge, but fun. The sauce was delicious. Very robust and aromatic. Can't wait to make this one again! Even if you don't want to make the crust yourself, make the sauce and use it on a pre-made pizza shell. The longer you cook it, the better!

Terrific Turkey Chili

My husband and I absolutely adore this recipe! I made a few adjustments to cater to my husband's taste. I only use 1/2 can of green chile peppers, and add 1/2 can jalapeno peppers. That really spices it up! I've also left out the coriander because I don't have any, and I increased the cooking time to a few hours. It is a winter favorite in our house. I make a big batch and freeze part of it. It's delicious with corn chips!

Broiled Sweet and Tangy Tilapia

This was a delicious, easy recipe. I really DON'T like mustard, but you couldn't taste it at all. I agree with doubling the recipe to have more sauce. You also don't really need the butter in the bottom of the foil...maybe just a sprinkle of olive oil. I think I'll also try it on different types of fish.

Caribbean Grilled Chicken Breast with Pineapple Salsa

I was really impressed with this. I made this for my husband the night before we left for our honeymoon. The salsa was the best! It sounds like a strange combination, but was nice and cool with the spicey-ness of the chicken. Definitely a repeat recipe...

Slow-Cooker Chicken Tortilla Soup

Absolutely delicious for cold days. I added extra cilantro and used a can of diced tomatoes instead of crushing the stewed tomatoes. The freshness of your spices will add to the flavor this soup. This is a keeper...I've made it three times in two weeks!

Spicy Shredded Beef

This was so delicious. Whereas some reviewers say to not over-do the cumin, I tripled it and then added a dash or two more. I would suggest some kind of hot sauce - or maybe some cayenne pepper. This is a great recipe to make in bulk (5 lbs +) and freeze the extras. I was a little concerned during the cooking, as it didn't "look" how I thought it was going to. But by the time the two hours was up - it looked and smelled perfect! Thanks for this recipe!

Grilled Portobello Mushrooms

So delicious. We used golden balsamic and they came out so flavorful. I bought the ones that were already sliced, but they were so difficult to grill...next time I'll buy the larger ones. They also shrink considerably (I forgot that happens to mushrooms). This would have been a great meal for Lent if I had found it back then.

Slow Cooker Pulled Pork

This was just ok. I didn't think the Root Beer did much for it...and it ended up just tasting like BBQ sauce. I'll go back to my old recipe.
