Chicken and Black Bean Casserole

Reviewed: Aug. 18, 2012
While this casserole was tasty with the added garlic and corn suggested by others, it took at least 90 minutes to cook (and I had even added a little beef broth for extra moisture and covered the casserole dish). I suspect the recipe was meant for instant rice. Next time I will definitely cook the rice separately and then add it to the casserole.

Tasty 2-Step Chicken

Reviewed: Dec. 31, 2011
Was looking for a quick recipe that used chicken and mushroom soup as a base and this really did the trick! I halved the recipe and added 1/2 red onion, 1 clove garlic, 1 tsp dried basil, 1 tsp dried parsley, 2 small red potatoes, 1/2 cup carrots, 1/2 cup zucchini, 1/2 tomato, and 1/2 red pepper. The result was delicious! I would give the recipe more stars, but to be fair, like most others who reviewed the recipe, I deviated quite a bit.

Pancho Villa Baked Tilapia

Reviewed: Jul. 19, 2009
Took the suggestions and added 1 clove of garlic, 1/2 tsp of cumin, a dash of paprika, salt and pepper. Used 2 tomatoes instead of canned. No chiles or cilantro. Good flavour. I rated this 4* because with all of the changes this isn't really the original recipe.

Garlic-Herb Red Snapper

Reviewed: Jul. 16, 2009
Great recipe, especially with the suggestions by Taylor F. Omitted the lemon zest so that the lemon wasn't overpowering. I didn't have chevril, but the parsley and sage worked out deliciously!

Peanut Butter Heaven

Reviewed: Jun. 14, 2009
I cut the recipe in half and baked in a 9" x 13" pan. The squares turned out perfectly! They were just the right thickness. While I did freeze them to get them to set quickly (I was in a rush), they were best eaten at room temperature. A number of people commented that they were so tasty because they weren't too sweet. I suspect it's because this recipe calls for oats (rather than graham crackers) and I used unsweetened peanut butter (100% peanuts).

Chocolate Marvel Cake

Reviewed: Oct. 7, 2007
Can't believe this is low fat! The cake itself was a little chewy, but I think I may have undercooked it. The icing was outstanding and really made this cake. Thanks for sharing!

Cherry Cobbler I

Reviewed: Jul. 16, 2005
As I was baking with sweet cherries, I used 1/2 cup sugar and 3/4 cup water. If I make again, will use slightly deeper 9 inch pan. Overall, good amount of sweetness.

I have made this recipe twice for a crowd to rave reviews! Try not use sundried tomatoes that are too dry.
