Chocolate-Zucchini Cupcakes

Tasty and easy. I used semi-sweet chocolate chips and also frosted them with melted chocolate. A great treat - especially if you've got guests who can't have dairy.

Chocolate Zucchini Bread II

Very good. Next time, I'll cut down on the sugar a bit, add more zucchini, and maybe try it as muffins or in a bundt pan.

Zucchini Souffle

Good starter recipe. It's not really a souffle, the end result is more like a frittata. A little on the bland side but I think it would be easy to adapt to one's taste. Next time, I'm going to try to add chopped artichoke hearts and some parmesan.

Healthy Turkey Loaf

good starter recipe that can be tweaked to ones preference. i added a couple of tablespoons of cottage cheese. it sounds wierd, but it helps to keep the turkey moist.

Chocolate Oil Cake

I made this cake for a friend with a dairy allergy. It tasted pretty good - a lot like a boxed cake mix. It would work as a vegan cake as well. I improvised a non-dairy frosting of melted semisweet chocolate chips, 3 tbs brewed coffee, 1 tbs canola oil, and a little maple syrup for sweetener. Worked well together

Crustless Cranberry Pie

Crisp Oatmeal Cookies

Great starter recipe to adjust as desired. I am experimenting with some healthier cookie recipes and replaced half the shortening (I used butter) with 3/4 ground flaxseed meal. I also cut back on the sugar and added a little maple syrup. Still turned out great. Thanks.

Sweet Potato Pie I

I've made this exactly as the recipe dictates and it comes out perfect. It's also a good starting point. Overseas this Thanksgiving, I could only find white sweet potatoes, which are a bit gray when cooked. To make it more visually appealing, I added a few cooked carrots and used half brown sugar. It looked like pumpkin pie and tasted great,
